Abstract
710,866. Cooking apparatus. LYONS & CO., Ltd., J., and GLUCKSTEIN, L. March 20, 1952 [March 20, 1951], No. 6668/51. Class 28(1) Prepared vegetables or the like are cooked in separate small quantities in wire mesh or perforated containers which are traversed through water maintained at cooking temperature and then traversed above the water before removal one by one. A lagged metal water tank 1 is thermostatically controlled and has, above it, a closed chamber 1a formed by hood 5. Water is circulated in tank 1, e.g. by a pump, and the level is maintained constant by overflow pipe 3. Concentrated salt solution is injected through jets 2 preferably at timed intervals. Within hood 5 is a conveyer 6, compressing rods 7 with suspension devices 13 for mesh. containers. 14 connected between endless chains 8 running round wheels 9, 10 and jockey sprockets 15. Wheels 9 are driven through variable speed gearing 11, preferably by an electric motor, and wheel 10 is mounted on a sliding bearing so that the conveyer tension is adjustable. The lower run of the conveyer is arranged so that during this run the containers 14 are wholly immersed. The containers may be unloaded either at the loading end or at the other end and they may traverse the upper chamber first and return through' the water.
