518,493. Food preparations. AMMANN, P. Aug. 20, 1938, No. 24557. [Class 49] Oleaginous grains or seeds, such as earth nuts, hazel-nuts or almonds, are desiccated, pressed to remove a part of the oil and then caused to absorb a fluid which will suppress or modify their natural taste or composition. The fluid may be one, such as steam, with a purely physical action and which can afterwards be eliminated. Or it may be used as a vehicle for, for example, salt, sugar, glucose, honey or dextrine, in which case part of the absorbed liquid may be subsequently removed by drying or roasting. Or it may be the oil originally extracted and from which the taste has been removed, or oil having a different taste. Or it may be a fruit essence, for example, those of lemons or oranges. Praline or like pastes may be prepared by crushing the seeds, from which the oil has been partially removed, and mixing them with the oil previously extracted, modified as desired, or another oil ; other materials, for example, caramel sugar, may be added. The Provisional Specification refers to the use of refined paraffin oil in the pastes.
