Abstract

Foodstuffs and other organic materials which are liable to damage in the presence of oxygen during storage in closed containers are preserved by binding the oxygen of the air within the containers by means of oxidizable substances which are rapidly reacting at ordinary temperature but are protected from the air by provision of an air-insulating coating or admixture with agents acting to retard or prevent oxidation, the action of which is neutralized or destroyed by their being brought into contact with moisture or watery liquid before setting in of the reaction. The protecting agent with which the oxidizable substance is mixed may be a uniformly subdivided water-absorbing substance which in the dry state retards or prevents the reaction but on addition of water from a moist support or from moist goods to be preserved initiates the oxidation, e.g. sawdust, wood flour, paper pulp, or moss or peat litter. Where an air-insulating coating is employed it may consist of a substance which is dissolved or destroyed by moisture, e.g. gelatine, sugar or starch. Oxygen-absorbing preparations used include zinc dust mixed with deciduous wood sawdust, paper pulp, moss, peat litter, etc.; powdered cast iron mixed with powdered quartz and moss or peat litter; manganese dust mixed with deciduous wood flour; ferrous sulphate mixed with lime and moss or peat litter. Activated carbon may be included. Preservatives such as citric acid may also be used to prevent action of anaerobic bacteria.
