Abstract

A proteolytic enzyme is extracted from the green fruit, stalks or leaves of the fig, mulberry, pineapple, banana, and papaya by pressing out the juice, allowing it to stand, decanting the clear liquid, and evaporating under reduced pressure. As alkalinity develops during the concentration, the liquid is slightly acidified with acetic acid. The concentration is carried on until the liquid has the consistency of syrup from which the enzyme is precipitated by acetone, washed with methyl alcohol and dried.
