Abstract
Water for use in brewing containing bicarbonates is treated with lime and heated and sufficient acid is then added to combine with the hydroxide and carbonate remaining in the water. The whole treatment may be carried out in a single vessel or the water may be decanted to a second vessel for the treatment with acid. Calcium chloride may be added with the lime and calcium sulphate with the acid. Sulphuric acid is preferably used and it may be supplied in the form of acid sulphate of sodium or potassium. In an example a small quantity of sodium chloride is added with the lime.
