Abstract

Rolling-machines.-To simulate hand kneading the orbitally-moving tile or trough of the trough-and-band or trough-and-table. types of apparatus is furnished with a through passage at one side and with inclined projections on the other side, the cross-section of the tile trough through any one of the projections simulating the form of the downwardly-held palm and fingers of the human hand as held in hand kneading. The corrugations or projections treat the lumps of dough in turn. A dough-carrying band moves continuously over a table 1, Fig. 11, while the arched member or trough 2, Figs. 3, 6, and 8, is formed with corrugations 5 at one side only which are inclined to the, longitudinal axis of the trough. Vertical cranks 12 impart an orbital movement to the trough. A channel 8<1> between the edges of the projections 5 and the edge of the member 2 prevents the escape of dough at the side during the kneading process. On issuing from these members the pieces of kneaded dough are delivered to conveyer belts which deliver them to loaf-shaping rollers which impart the final form to them.
