693,516. Shaping cooked plastic pastry. BAHLSEN, W. Jan. 25, 1951 [Feb. 25, 1950], No. 1911/51. Class 87 (ii) [Also in Group VI] A continuous length of baked dough, while still in a warm and deformable state, is passed through a series of elements which shape it as required, and the shaped length of pastry is continuously conveyed from the shaping means to means which divide it into separate pieces of the desired length after it has become rigid. The length of baked dough or pastry 1 emerges from the cooker and passes through a series of rollers, Fig. 1, grouped so as to shape it progressively, the first set of rollers being as in Fig. 2 and the last set as in Fig. 7. The rolling is preferably done in a heated chamber 22. The pastry is stiffened by being passed through cooling coils 23 and is then cut up by a band saw 24. Alternatively, Fig. 9, the pastry 28, after first being trimmed to a suitable width by two circular knives 27 spaced at the correct distance, passes onto a flexible belt 26 which is then bent into the form of a trough by a pair of rollers 29, 30. Metal is mentioned as a suitable material for the belt. The belt 26 is then bent over still further by a stepped roller 31, in such a way as to enable its edges to overlap when it enters a tube 32, through which it is guided in its closed shape. The rollers are preferably in a heated chamber 36, but the tube 32 is surrounded by a cooling device 33 whereby the pastry tube is stiffened. Just before the pastry is closed into a tube, filling material may be injected through a nozzle 38. The moulded pastry is cut into lengths by opposed star knife wheels 34, 35. The tube 32 may not be round but of any shape to give a desired shape to the moulded pastry. The invention may also be carried out by using a series of groups of guide plates through which the baked dough is drawn by rollers or belts. The parts may be interchangeable so that the same machine may produce different shapes of pastry.
