Abstract

Frying-ranges.-The bath C is formed with a deep end C<1> into which the chips are delivered from a power chipper, a rotary stirrer being provided to prevent the chips from sticking to the bottom of the pan. As the moisture originally contained in the chips evaporates,' or becomes discharged, the chips rise to the surface and are engaged by a series of rakes B carried on endless chains b mounted on sprocket wheels b<1>, a guide b<2> serving to position horizontally the rakes B as they leave the fat and tilt them to discharge the chips through the outlet b' in the casing A on to the draining tray b<4>, from which the fat returns to the bath through a pipe c, which pipe, together with the tray b<4>, is kept heated bv the burners which heat the bath C. The rakes B are made of perforated sheet metal, wire netting or finely spaced pins, and the chains b are driven by worm gearing which is also connected with the power chipper and stirrer: A flue is provided in the 'top of the casing A in which a fan may be placed. The burners may be thermostatically controlled.
