1487508 Filleting fish NORDISCHER MASCHINENBAU RUD BAADER 29 Dec 1975 52972/75 Heading A2U A machine for filleting fish comprises means (not shown) for conveying fish tail first, belly down, a pair of belly filleting knives 21, a pair of back filleting knives 22, a pair of tail flank portion separating knives 3, a pair of rib knives 4, a pair of upper pin bone knives 6, between the back filleting knives and the separating knives arranged to cut in a horizontal plane above the pin bones, a pair of lower pin bone knives 7, between the separating knives and the rib knives arranged to cut in a horizontal plane below the pin bones, deflecting means 8, in front of the separating knives adapted to deflect the back muscle to hang downward, guide plates 91 behind and in the same plane as the upper pin bone knives extending up to the lower pin bone knives, hold down means 9, below the plane of the lower pin bone knives and in tight relation in front thereof to hold down the deflected back muscle and control means (not shown) to move each pair of pin bone knives toward one another as the end of the belly of the fish passes. In the embodiment shown two strip , cutting knives 5 are arranged in planes extending into the space between the rib knives.
