Abstract

1461992 Filleting fish NORDISCHER MASCHINENBAU RUD BAADER 15 May 1975 [20 Dec 1974] 20536/75 Heading A2U A machine for producing boneless fish fillets from which the bellyflaps, including the pin bones, have been removed-Fig. 3-comprises conveying means to convey a fish along a linear portion of feedpath with the backbone of the fish longitudinally orientated with respect to the path, a belly filleting knife 11, 12 on each side of the feed path portion to make a belly cut to separate each belly flap from the pelvic fin bone of the fish, a back filleting knife 21, 22 disposed on each side of the feed path to make a back filleting cut to separate each fillet from the backbone of the fish, a pin-bone knife 31, 32 disposed on each side of the path to make an incision in each side of the fish just above the pinbones thereof and longitudinally in the vicinity of the belly cavity, said incision extending inward to the dorsal vertebral projections of the fish, a cross-cutting knife 51, 52 disposed on each side of the path to make a lateral outward incision through each belly flap in the vicinity of the end of the belly cavity and a pair of rib knives 81, 82 to separate each belly flap from the lateral vertebral projections and the ribs of the fish, the cross-cutting knives 51, 52 being disposed downstream of the pin-bone knives 31, 32 and upstream of the rib knives 81, 82. The embodiment shown also includes separating knives 41, 42. Guides 61, 69 which together with cross-cutting knives 51, 52 may be moved together or apart, distort the belly wall of the fish so that the knives make lateral cuts.
