Abstract
1435112 Dairy product preservation M BLANCHAUD 25 July 1973 [25 July 1972] 35350/73 Heading A2D A process for improving the preservation of dehydrated cheese (the term "cheese" means all products formed by the coagulation of casein in milk) comprises intimately mixing liquid buttermilk with cheese and dehydrating the resulting mixture by freeze-drying. The buttermilk used preferably contains 2 to 10% by weight of solids and has a pH of from 4 to 6. The process is applicable to the treatment of cottage cheese, fermented cheese or yoghurt.
