1424786 Isomerized hop extract BUSH BOAKE ALLEN Ltd 15 June 1973 [15 March 1972 2 Oct 1972] 28541/73 and 28543/73 Divided out of 1423129 Heading C6E A crude or partially purified isomerized hop extract comprises (a) iso-α-acids, or their non- toxic wort-soluble or dispersible salts, (b) ,3-acids and/or hulupones or their non-toxic salts and (c) natural essential oils of hops (defined). The ratio a:b is preferably 3:1-1:1 by weight. The extract may contain the hard resins. The extract may be used for bittering beer when added to wort within 30-0À5 mins prior to the end of the wort boiling stage of brewing.
