Abstract

1,249,932. Tea. TENCO BROOKE BOND Ltd. 2 July, 1970 [10 July, 1969], No. 34917/ 69. Heading A2B. [Also in Division C3] Tea creams, being that proportion of tea solids which are precipitated by cooling infusions of black tea, are solubilised by treating an aqueous suspension of the tea cream with an enzyme preparation, preferably tannase which may have been derived from Aspergillus oryzae, niger or flavus, capable of converting at least a portion of the cream to a cold-water soluble form. The treatment may be effected at elevated temperature, the enzyme being thereafter removed and the suspension cooled. The treatment may be applied to infusions prior to centrifuging off the tea cream, or to the separated material. A water soluble tea concentrate, produced by preparing an aqueous solution of a tea extract containing a suspension of the cream, and stabilising as above, may be dried to give a powder.
