Abstract
1,230,587. Yeast. PRESSINDUSTRIA S. p. A. July 29, 1968 [March 23, 1968], No.36039/68. Heading C6F. [Also in Division F4] A continuous process for drying yeast comprises fluidizing the yeast by air passing through a vertically vibrating base. A suitable apparatus comprises a series of fluidizing units each comprising a vertically vibrating perforated grid 2, air inlet 4 and partitions 6, 7 on the grid. The yeast is extruded and dropped on to the first perforated grid 2 through duct 12, fulidized by air passing through the grid and passed over the grid in a circuitous path due to the partitions 6, 7. The yeast is passed from one grid to the next over an adjustable weir 8. Fluidizing air is exhausted through outlets 15 and is passed to cyclone 17. The yeast before drying may have a moisture content of 65-75% by wt., a protein content of 38-48% by wt. on a dry basis, and a phosphorus content expressed as P 2 O 5 of 1À8-2À4% by wt. on a dry basis. The dried yeast may have a moisture content of 8-25% by wt. and a low glutathione content. The dried yeast is stable and can be rehydrated in cold water without significant loss of activity.
