1,135,488. Food product. BRITISH ARKADY CO. Ltd. 12 June, 1967 [24 June, 1966], No. 28390/66. Heading A2B. A cooked flour product, which may for example be eaten as a crisp snack or used as a filler in for example meat products, is made by preparing a paste of water and a flour containing at least 10% by weight of undenatured protein, for example undenatured soya flour or wheat flour, forming the paste into a thin shape, and cooking rapidly, for example by frying in oil such as groundnut oil above 150‹C., by baking above 220‹C., or by frying followed by baking, such that the protein at the surface of the shape is denatured to form a skin, and thereafter the inner portion of the shape is effected by the heat to cause rapid vaporization of the water and the formation of a sponge-like structure followed by setting and stabilizing of the sponge-like structure to render it crisp. Sugar, seasonings, and flavourings may also be present.
