Abstract

Prodn. of a spreadable, low fat milk prod. comprises heating the cream before processing and by bringing the cream again to its working temp. Relatively simple appts. is used with relatively low energy consumption. The processing step is carried out on the cream after heatin and before subsequent cooling to the processing temp. for =60 mins., this time being insufficient to cause ripening. Prodn. time and energy consumption arer lowered.
