Abstract

L'invention concerne des procédés de production de jus de fruits naturels et de sirops de couverture ainsi qu'une installation et une unité pour la mise en oeuvre de ces procédés. Le procédé de production de jus de fruits naturels est caractérisé en ce que l'on effectue un broyage en 2, 3 des déchets de fruits en une purée, on effectue ensuite un traitement de séparation physique en 17 efficace de la purée pour obtenir d'une part un jus de fruits partiellement dépulpé en 19 et d'autre part des pulpes en 18. La teneur en pulpes du jus de fruits est réglable. Le jus de fruits peut être commercialisé tel quel ou servir à la preparation d'un sirop de couverture de fruits en conserve.
