Abstract

Dough pieces (2) which rise during baking to a height (2') are placed on the baking tray (1). In order to ensure that all the finished baked items have the same height (H), a vertically adjustable frame (3, 3') is placed on the baking tray, which frame bears a covering (4) of dough-repellant plastic. The baking tray is then introduced into the oven with the frame and the covering. Baked items of even height produced in this manner can be accommodated with little freedom of movement in suitable packages. They are thus better protected.
