Abstract

Método y su correspondiente aparato para el envasado aséptico de productos alimenticios fuertemente ácidos, caracterizado el método porque incluye las operaciones que consiste en: A. Inmergir recipientes preformados de plástico que constituye una barrera al paso el oxígeno, en un baño de esterilizante líquido de tal manera que todo el aire contenido en dichos recipientes sea desplazado, efectuándose dicha inmersión durante un tiempo que puede variar entre menos de un segundo y 3,5 minutos, a una temperatura incluida entre 96,11 ºC y 60ºC (205ºF y 140ºF), estando dicho esterilizante constituido esencialmente por agua, B. Retirar dichos recipientes de dicho baño esterilizante y vaciar dicho esterilizante, C. Llenar dichos recipientes con el producto alimenticio fuertemente ácido pre-esterilizado, que tiene un pH inferior a 4,6, D. Soldar herméticamente un elemento de tapa estéril para cerrar dichos recipientes llenos, E. Efectuándose las operaciones B a D antedichas, en un espacio cerrado lleno de gas estéril inerte.
