Abstract

Procedimiento de fabricación de un alimento lacteado para lactantes cuyo peso es pequeño al nacer, en especial para prematuros, caracterizado porque en su realización comprende las etapas siguientes: a partir de leche fresca, grasa no láctea, suero desmineralizado, proteínas de suero ultrafiltradas, sales minerales, vitaminas y oligoelementos, se clarifica lecha fresca y se le normaliza adicionando grasa láctea, se añade una mezcla de grasas no lácteas, se pasteuriza, se concentra, se homogeneiza la mezcla obtenida, se le enfría, se añade suero prácticamente desmineralizado y proteínas solubles esencialmente no desnaturalizadas obtenidas por ultrafiltración de suero, se efectúa un precalentamiento y un secado de la mezcla en condiciones que permiten evitar la desnaturalización de las proteínas, se mezcla en seco el polvo obtenido con un donador de glucosa anhidro y se envasa el producto al abrigo del oxígeno.
