Abstract
A method for the production of hot-cut tomato pulp, characterized by introducing the whole tomatoes in a downstream of blanched tomato pulp, at a temperature between 94ºC and 99ºC, cutting the tomatoes as they are dragged down in said current, recirculate the cut pulp, reheat the pulp to the mentioned temperature between 94º and 99ºC as it is recirculated and before introducing the recirculated pulp in the descending direction to form the mentioned descending current and pumping out a proportion of the pulp recirculating at a speed proportional to the feeding speed of whole tomatoes.
