Abstract

Un procedimiento para la preparación de una margarina con propiedades de sabor frío por emulsificación y plastificación de una fase grasa y otra acuosa en la que la fase grasa está constituida por a) 20-80% de un aceite parcialmente hidrogenado derivado de otro aceite que no contenga más del 20% de ácidos grasos saturados, teniendo dicho aceite hidrogenado un punto de fusión de escurrido de 25-30ºC. Un contenido en ácidos trans de 45-80% y un D15- (D25+D30) de 500 por lo menos, b) 0-30 % de una grasa del tipo de ácido laúrico, c) 10-40 % de un aceite líquido, así como aceites y grasas adicionales, si se desea, en cantidades tales que la grasa de margarina tenga un D35 no mayor de 500, un D30 no mayor de 150, unD25 de 150-350, una diferencia entre D15 y D25 no inferior a 350 y un D15 no mayor de 800
