Abstract

Dispositivo para evacuación rápida de fluidos gaseosos en un horno de convección.
Aplicable en un horno con una cámara (10), para pan o bollería y un recinto (25) de dicha cámara (10), cerrado superiormente y abierto por sus laterales que alberga dos ventiladores (12) centrífugos, asociados a un inversor de giro y a unas resistencias eléctricas (11), instalados uno al lado del otro y separados por una pared divisoria (21) para hacer circular aire calentado en el interior de dicha cámara (10). El dispositivo para evacuación de fluidos gaseosos comprende una disposición de elementos deflectores (24) que proporciona al menos una pared inclinada, en rampa descendente hacia la periferia de dichos ventiladores (12) determinando una configuración de embudo que estrangula el flujo del aire lanzado por y lo impulsa fuertemente hacia una salida (13), capturando y haciendo desaparecer el vapor de agua generado en la cámara.
