Abstract

The preparation of chorizo-type sausages from minced meat comprises mincing, seasoning, pressing, batching and skewering of the stewed meat. After drying, the products are vacuum packed, for subsequent consumption, with or without cooking. The skinless products are not made up of sections but are single units.
