    - having an acceleration device (11) for the cooking chamber flow (GRS),
    wherein the acceleration device (11) is mounted on the cooking chamber (3), characterized in that:
    the acceleration device (11) has two air deflectors (11A, 11B) which are arranged at an angle (α) to the cooking chamber rear wall (4) and limit the fresh air inlet opening (9),
    a first air deflector (11A) is arranged on a first wall area (10') of the housing chamber rear wall (4), which is offset away from the cooking chamber (3) in the direction of the fresh air feeding line (14),
    a second air deflector (11B) is arranged on a second wall area (10) of the housing chamber rear wall (4),
    both air deflectors (11A, 11B) are at an angle (α) with respect to their corresponding wall areas (10', 10),
    so that the cooking chamber flow (GRS) can be channelled directly past the fresh air inlet opening (9).
  2. Apparatus according to claim 1, characterised in that the acceleration device (11) is arranged adjacent to the fresh air inlet opening (9).
  3. Commercial cooking apparatus according to claim 1 or 2, characterised in that the fresh air inlet opening (9) is arranged above the upper edge of the fan wheel (5) in a wall area (10) of the cooking chamber rear wall (4).
