Abstract
Цель настоящего изобретения состоит в том, чтобы предложить композиции, содержащие растительные масла и антиоксидантную систему для предупреждения окисления триглицеридов в растительном масле в пищевых продуктах, в частности в продуктах, которые часто хранятся в течение длительного времени. Антиоксидантная система не должна придавать пищевой композиции ни нежелательной окраски, ни нежелательных вкуса и запаха. Кроме того, она должна представлять собой натуральное соединение и/или общеизвестный пищевой ингредиент и соответствовать пищевой композиции в плане вкуса и цвета. Это стало возможным за счёт обеспечения пищевой композиции, содержащей растительное масло и яблочный уксус, при этом массовое отношение лимонной кислоты и яблочной кислоты к общему количеству органических кислот в яблочном уксусе составляет более 2%.
