Verfahren zur Herstellung laktosefreier Milch Die Erfindung betrifft ein Verfahren zur Herstellung von laktosefreier Milch, Magermilch oder Buttermilch durch Ausfällung der Eiweißstoffe, die nach Entfernung des Milchzuckers unter Zusatz der im natürlichen Rohstoff vorhandenen Salze wieder in wäßriger Lösung suspendiert werden, und besteht darin, daß die Eiweißstoffe aus dem nur eben angesäuerten Rohstoff durch Zusatz von Decoctum Carrageen als reversibler, kolloidaler Niederschlag ausgefällt und nach Entfernung des Milchzuckers unter Verwendung von Blutserum, beispielsweise einem Blutserum der Kuh, das die gleiche Albuminlösung enthält, wieder in wäßriger Flüssigkeit suspendiert werden. Beim Arbeiten gemäß der Erfindung wird die unverdünnte oder mit Wasser verdünnte Milch, Magermilch oder Buttermilch schwachangesäuert, so daß eine Fällung nicht entsteht, und dann eine kleine Menge eines vorzugsweise i bis 1,3 % igen Decoctum Carrageen nach den Anweisungen von Dr. v o n L i n g e 1 s h e i m (Zeitschrift f. Hygiene und Infektionskrankheiten, Bd. 42, 1903) zugesetzt. Dadurch werden alle Eiweißstoffe aus der Milch gefällt. Der Niederschlag kann durch wiederholtes Waschen mit Wasser und Dekantieren von den geringen Mengen Säure und vom Milchzucker völlig befreit werden. Der Eiweißrückstand wird dann durch Zusatz eines der Milch entsprechend verdünnten Blutserums wieder in Suspension gebracht. Der Geschmack und der Suspensionszustand werden durch Zusatz der in der natürlichen Milch vorkommenden Salze verbessert.
