Ein kastenförmiges Fußgestell g enthält das Getriebe zum Antrieb des Messers 57 und des Wagens 16. Der Wagen 16 läuft auf der gegen das Messer zu abfallenden Deckplatte des Fußgestells g. Zur Verringerung der Reibung sind in bekannter Weise an der Unterseite des Wagens 16 Rinnen 17 vorgesehen, in welche Kugeln 18 eingefügt sind. Diese Kugeln werden vorteilhaft in Abstände voneinander gebracht und in diesen durch sogenannte Käfige gehalten. Die Käfige werden durch gelochte Stahlplatten 19 gebildet, welche von oben und von unten auf die Kugeln aufgestreift sind und gegebenenfalls durch Paßstücke im bestimmten Abstand voneinander gehalten werden. Auf dem Wagen 16 wird schließlich die Vorrichtung 20 zum Festhalten des Fleisches befestigt. Die Regelung der Bewegung des Wagens 16 erfolgt durch das Kettengetriebe 6, 7, 8, welches gleichzeitig durch die Vorgelegewelle 9 und das Kettengetriebe 10, 11, 12 die Drehung der Welle 13 des Messers 57 verursacht. Der Antrieb der Kettengetriebe erfolgt durch das mit Handgriff versehene Schwungrad 1, auf dessen Welle 2 ein Kegelrad 3 sitzt, das mit einem Kegelrad 4 auf der Welle des Kettenrades 6 zusammen kämmt. Die Verbindung zwischen dem Wagen 20 und dem Kettengetriebe 6, 7, 8 wird durch ein Kettenrad 14 mit drei Daumen 15 vermittelt.
