本发明涉及一种软胶囊及其制作方法,尤其涉及一种鱼油软胶囊及其制作方法。
背景技术
鱼油是鱼身或内脏中提取得来的油脂,鱼油中包含了大量的不饱和脂肪酸,尤其是二十二碳六烯酸(DHA)和二十碳五烯酸(EPA),对人脑及心血管具有较好的保健作用。尤其是深海鱼的鱼眼中,DHA的含量可以高达40~70%,是很好的食用DHA来源。
现有技术中,鱼头等边角料在食品厂或市场的加工过程中往往被忽视,导致大量的鱼头被丢弃,一方面增加了垃圾处理压力,另一方面对DHA和EPA等营养成分造成了浪费。
并且,鱼油的制作工艺繁琐。自鱼体中通过压榨工艺获得鱼油的粗提物,在经过多次过滤、皂化、水洗、真空脱水脱色、脱脂、脱臭等复杂工艺后得到澄清无臭的精制鱼油。期间工艺复杂、线程长,鱼油容易受污染变质从而降低鱼油产量,并且复杂的工艺意味着机器的增多,加工时间增长,导致鱼油生产的成本提升。
发明内容
为了解决上述技术所存在的不足之处,本发明提供了一种鱼油软胶囊及其制作方法。
为了解决以上技术问题,本发明采用的技术方案是:一种鱼油软胶囊,鱼油软胶囊由以下质量份的各物质组成:
回收鱼油30~80份;多孔碳酸钙1~15份;
维生素E 0.5~2份;明胶5~20份;
甘油1~5份;水5~20份。
优选的,多孔碳酸钙的粒径为1~10μm。
一种鱼油软胶囊的制作方法,由以下步骤组成:
a、回收鱼头的粗加工;从市场或鱼肉制品加工厂回收废弃的鱼头,经过冲洗、碾碎后,添加500U/g的蛋白酶对回收鱼头进行酶解,酶解2h后,提取粗制鱼油;
b、精制回收鱼油;将步骤a中获得的粗制鱼油经80℃热水洗油多次,至洗涤水为中性为止;逐渐降温至0~1℃后,用压滤法制得精制的回收鱼油;
c、制备软胶囊内容物;向30~80份的回收鱼油中添加1/3体积的活性炭,搅拌30min后,离心过滤去除活性炭;之后再与0.5~2份的维生素E混合,混匀后加入1~15份的多孔碳酸钙,混匀,制成软胶囊内容物;
d、制备鱼油软胶囊;对5~20份的水进行加热,在加热的过程中将1~5份的甘油溶于水中形成甘油水溶液;当甘油水溶液的温度升至55℃时,放入5~20份的明胶并且缓慢地搅拌使明胶加速溶解制得明胶水;在滴丸机的油料斗中放入软胶囊内容物,胶料斗中放入明胶水,启动滴丸机,制得鱼油软胶囊。
优选的,蛋白酶为碱性蛋白酶。
回收鱼油是来自市场或鱼肉加工工厂的鱼肉制品边角料,主要以鱼头为主,提取加工出的鱼油。一方面可以高度回收利用废弃的鱼边角料,解决垃圾排放的问题,另一方面鱼头、鱼眼中包含了大量氨基酸和DHA、EPA等不饱和脂肪酸,废弃将造成营养成分的浪费。
多孔碳酸钙是碳酸钙家族中的一类化合物,其表面具有多孔结构,在本发明中,多孔碳酸钙的作用是吸附鱼油中的腥臭味,并且进入人体可以补充人体的钙元素。
维生素E是一种很好的抗氧化剂,添加到鱼油中可以有效延长鱼油内DHA和EPA的保质期,并且微生素E对人体也具有抗氧化作用。
甘油和明胶都是软胶囊的囊材,具有包裹胶囊内容物和易于消化的特点;甘油的作用是保湿,保持软胶囊的柔软和弹性以延长胶囊的存放期限;明胶干燥后成膜,可以包裹胶囊内容物。

a、回收鱼头的粗加工;从市场或鱼肉制品加工厂回收废弃的鱼头,经过冲洗、碾碎后,添加500U/g的蛋白酶对回收鱼头进行酶解,酶解2h后,提取粗制鱼油;碱性蛋白酶的酶解效果最好;相比现有技术中的压榨法,酶解法具有更高效的优点,反应条件温和,提取鱼油的产量高,浪费少。但是酶解过程中会产生氨类、吲哚、三甲胺、硫化氢、醛酮类以及挥发性有机酸等化学成分,导致腥臭味加重。
b、精制回收鱼油;将步骤a中获得的粗制鱼油经80℃热水洗油多次,至洗涤水为中性为止;逐渐降温至0~1℃后,用压滤法制得精制的回收鱼油;此时得到的鱼油澄清度较高,但是颜色深且味道重,需要进一步处理。
c、制备软胶囊内容物;向30~80份的回收鱼油中添加1/3体积的活性炭,搅拌30min后,离心过滤去除活性炭;之后再与0.5~2份的维生素E混合,混匀后加入1~15份的多孔碳酸钙,混匀,制成软胶囊内容物;
添加的活性炭具有很好的脱色效果,使鱼油呈浅黄色,但是吸附腥臭味的功效较差。而添加的多孔碳酸钙在补充钙元素的同时,具有很好的吸附腥臭味的作用,极大的降低了鱼油异味,对加工环节进行了减负。
d、制备鱼油软胶囊;对5~20份的水进行加热,在加热的过程中将1~5份的甘油溶于水中形成甘油水溶液;当甘油水溶液的温度升至55℃时,放入5~20份的明胶并且缓慢地搅拌使明胶加速溶解制得明胶水;在滴丸机的油料斗中放入软胶囊内容物,胶料斗中放入明胶水,启动滴丸机,制得鱼油软胶囊。
下面通过具体实施例对本发明的技术方案做详细说明:
实施例一、
一种鱼油软胶囊由以下质量份的各物质组成:
回收鱼油30份;多孔碳酸钙15份;
维生素E 0.5份;明胶20份;
甘油1份;水20份。
多孔碳酸钙的粒径为1~10μm。
鱼油软胶囊的制作方法由以下步骤组成:
a、回收鱼头的粗加工;从市场或鱼肉制品加工厂回收废弃的鱼头,经过冲洗、碾碎后,添加500U/g的蛋白酶对回收鱼头进行酶解,酶解2h后,提取粗制鱼油;碱性蛋白酶的酶解效果最好;
b、精制回收鱼油;将步骤a中获得的粗制鱼油经80℃热水洗油多次,至洗涤水为中性为止;逐渐降温至0~1℃后,用压滤法制得精制的回收鱼油;

实施例二、
与实施例一的区别在于:
回收鱼油80份;多孔碳酸钙1份;维生素E2份;明胶5份;甘油5份;水5份。
实施例三、
回收鱼油40份;多孔碳酸钙5份;维生素E1份;明胶10份;甘油2份;水10份。
实施例四、
回收鱼油70份;多孔碳酸钙13份;维生素E1.5份;明胶15份;甘油3份;水15份。
实施例五、
回收鱼油50份;多孔碳酸钙7份;维生素E0.5份;明胶20份;甘油4份;水20份。
实施例六、
回收鱼油60份;多孔碳酸钙10份;维生素E2份;明胶15份;甘油1份;水15份。
实施例七、
回收鱼油55份;多孔碳酸钙9份;维生素E1.8份;明胶12份;甘油3份;水12份。
本发明与传统技术相比,具有以下优势:
a、本发明回收利用工厂加工的边角料进行鱼油的提取,提高鱼体的利用率,减轻了处理边角料造成的环境污染;
b、相比市场上从鱼身脂肪中提取的鱼油具有更高含量的DHA和EPA;本发明鱼油所包含的DHA含量可高达12.55g/100g,EPA含量可高达9.68g/100g;
c、缩短鱼油的加工流程,有效防止了加工过程中造成的污染,提高产量;
d、添加的多孔碳酸钙对鱼油中的腥臭味具有吸附作用,从而取消了现有技术中的除臭环节,缩短加工工序;并且多孔碳酸钙还可以补充钙元素,增加本发明的营养价值。

Claims (4)
1.一种鱼油软胶囊,其特征在于:所述鱼油软胶囊由以下质量份的各物质组成:
回收鱼油30~80份; 多孔碳酸钙1~15份;
维生素E 0.5~2份; 明胶5~20份;
甘油1~5份; 水5~20份。
2.根据权利要求1所述的鱼油软胶囊,其特征在于:所述多孔碳酸钙的粒径为1~10μm。
3.一种如权利要求1或2所述鱼油软胶囊的制作方法,其特征在于:所述制作方法由以下步骤组成:
a、回收鱼头的粗加工;从市场或鱼肉制品加工厂回收废弃的鱼头,经过冲洗、碾碎后,添加500U/g的蛋白酶对回收鱼头进行酶解,酶解2h后,提取粗制鱼油;
b、精制回收鱼油;将步骤a中获得的粗制鱼油经80℃热水洗油多次,至洗涤水为中性为止;逐渐降温至0~1℃后,用压滤法制得精制的回收鱼油;
c、制备软胶囊内容物;向30~80份的回收鱼油中添加1/3体积的活性炭,搅拌30min后,离心过滤去除活性炭;之后再与0.5~2份的维生素E混合,混匀后加入1~15份的多孔碳酸钙,混匀,制成软胶囊内容物;
d、制备鱼油软胶囊;对5~20份的水进行加热,在加热的过程中将1~5份的甘油溶于水中形成甘油水溶液;当甘油水溶液的温度升至55℃时,放入5~20份的明胶并且缓慢地搅拌使明胶加速溶解制得明胶水;在滴丸机的油料斗中放入软胶囊内容物,胶料斗中放入明胶水,启动滴丸机,制得鱼油软胶囊。
4.根据权利要求3所述的鱼油软胶囊的制作方法,其特征在于:所述蛋白酶为碱性蛋白酶。
