荔枝( Litchi chinensis Sonn .)为岭南佳果,被誉为中华之珍品。荔枝属无患子科植物,果实色泽鲜红,肉质洁白而晶莹,果肉细嫩多汁,味清香爽甜,营养丰富,含有多种维生素、有机酸及大量游离精氨酸和丝氨酸,深得人们喜爱。荔枝营养丰富含葡萄糖、蔗糖、蛋白质、脂肪以及维生素A、B、C等并含叶酸、精氨酸、色氨酸等各种营养素对人体健康十分有益。荔枝具有健脾生津、理气止痛之功效,适用于身体虚弱病后津液不足胃寒疼痛疝气疼痛等症。现代研究发现荔枝有营养脑细胞的作用,可改善失眠、健忘、多梦等症并能促进皮肤新陈代谢延缓衰老。
椰子(Cocos nucifera L.)是棕榈科椰子属植物,常年开花结果,椰汁及椰肉含大量蛋白质、果糖、葡萄糖、蔗糖、脂肪、维生素B1、维生素E、维生素C、钾、钙、镁等。椰肉色白如玉,芳香滑脆;椰汁清凉甘甜。椰肉、椰汁是老少皆宜的美味佳肴。在每100克椰子中,能量达到了900多千焦,蛋白质4克,脂肪12克,膳食纤维4克,另外还有多种微量元素,碳水化合物的含量也很丰富。椰子性味甘、平,入胃、脾、大肠经;果肉具有补虚强壮、益气祛风、消疳杀虫的功效,久食能令人面部润泽,益人气力及耐受饥饿,治小儿涤虫、姜片虫病;椰水具有滋补、清暑解渴的功效,主治暑热类渴、津液不足之口渴。
椰纤果是以椰子水或椰子汁(乳)等果汁为主要原料,经木醋杆菌发酵制成的一种纤维素凝胶物质,商品名为椰果、纳塔、高纤椰果。椰纤果具有低热量、高纤维、口感滑爽、咀嚼性好等特性,因此具有减肥、防便秘、清肠胃、排毒、降低胆固醇的功效,是一种理想的保健食品。。
发明内容
本发明的目的是提供一种荔枝椰子口味冰淇淋及其制作方法,本发明的冰淇淋包含了荔枝和椰子两种口味,还加入了口感滑爽的蜜制椰果,既香甜可口又有嚼劲,而且本发明的冰淇淋适宜自动化、大批量连续生产,生产效率高。
本发明所述荔枝椰子口味的冰淇淋及其制作方法,冰淇淋包括以下重量份数原料:椰子原浆5-30份、荔枝原浆5-15份、蜜制椰果3-8份、白砂糖5-15份、麦芽糖1-6份、全脂乳粉10-15份、脱脂乳粉10-15份、精炼椰子油1-10份、奶油8-12份、乳化剂0.4-1份、增稠剂0.1-1份、饮用水适量。
所述乳化剂为乳化剂471和433;
所述增稠剂为增稠剂412、410、401和407;
所述椰子原浆是将新鲜的椰汁和椰肉一起打磨成果浆即得;
所述荔枝原浆是将荔枝去壳去核得到果肉,用水蒸汽热烫2-3min,再将果肉迅速投入配制好的护色浆中浸泡冷却25-30min,随后放入高速搅拌机中破碎打浆,破碎打浆时喷雾添加浓度为0.5%-0.8%的维生素C,防止果肉与空气接触发生氧化褐变,得到白色的荔枝果浆。
所述蜜制椰果包括以下重量份数原料:椰纤果30-50份、白砂糖25-35份、果葡糖浆5-10份、羧甲基纤维素钠0.9-1.2份、食用香精0.1-1份、饮用水适量;
蜜制椰果的制作方法包括以下步骤:(1)将椰纤果进行复水脱酸,(2)将白砂糖、果葡糖浆和羧甲基纤维素钠混合加入饮用水,熬制成糖液浓度约为40%的糖胶溶液,(3)将椰纤果加入到糖胶溶液中煮1h,随后加入食用香精再煮3-5min,(4)将糖煮后的椰纤果至于常压条件下静置,进行糖渍1h,(5)将椰纤果捞出沥干糖液进行热风干燥至含水量为12%-18%,(6)将干燥后的椰纤果粉碎成尺寸小于5mm的颗粒。
冰淇淋的制作方法包括以下步骤:
(1)原料混合:按原料配比取椰子原浆、荔枝原浆、白砂糖、麦芽糖、全脂乳粉、脱脂乳粉、精炼椰子油、奶油、乳化剂、增稠剂、饮用水,在高速搅拌下混合均匀;
(2)巴氏杀菌:在80-90℃下快速杀菌15-30s;
(3)均质:将所得浆料冷却至60-70 ℃,然后采用二级均质法,一级均质压力为15-20MPa,均质10-15min,二级均质压力为3-5MPa,均质3-8min,均质完毕立即冷却至4℃;
(4)老化:在4℃下进行老化4-6h;
(5)膨化:在凝冻机内进行膨化,膨化温度为-28℃,膨化率控制在70%-100%;
(6)灌注:通过直管直接把浆料灌注到杯子内;
(7)加料:在冰淇淋的表面撒上一层蜜制椰果;
(8)密封速冻包装:在杯子上面盖上盖子,然后在-35℃下装盘,随后送至-35℃的隧道内进行速冻,最后装箱,在-18℃恒温条件下冷藏。
本发明的有益效果是:
本发明的冰淇淋包含了荔枝和椰子两种口味,荔枝味清香爽甜,营养丰富,含有多种维生素、有机酸及大量游离精氨酸和丝氨酸;椰肉色白如玉、芳香滑脆,椰汁清凉甘甜,椰汁及椰肉含大量蛋白质、果糖、葡萄糖、蔗糖、脂肪、维生素B1、维生素E、维生素C、钾、钙、镁等;两种水果都是清甜可口又富含蛋白质和维生素,将两种水果的原浆混合奶粉一起制成冰淇淋,既满足了人们对于冰淇淋口味多样化的追求,也满足了人们对于营养食品的需求。本发明的冰淇淋还加入了口感滑爽的蜜制椰果,既香甜可口又富有嚼劲。而且本发明的冰淇淋适宜自动化、大批量连续生产,生产效率高。

为了更加详细的介绍本发明,下面结合实施例,对本发明做进一步说明。
实施例1
荔枝椰子口味冰淇淋及其制作方法,冰淇淋包括以下重量份数原料:椰子原浆20份、荔枝原浆10份、蜜制椰果5份、白砂糖10份、麦芽糖3份、全脂乳粉12份、脱脂乳粉13份、精炼椰子油6份、奶油10份、乳化剂0.7份、增稠剂0.5份、饮用水适量。
所述乳化剂为乳化剂471和433;
所述增稠剂为增稠剂412、410、401和407;
所述椰子原浆是将新鲜的椰汁和椰肉一起打磨成果浆即得;
所述荔枝原浆是将荔枝去壳去核得到果肉,用水蒸汽热烫3min,再将果肉迅速投入配制好的护色浆中浸泡冷却28min,随后放入高速搅拌机中破碎打浆,破碎打浆时喷雾添加浓度为0.6%的维生素C,以防止果肉与空气接触发生氧化褐变,得到白色的荔枝果浆。
所述蜜制椰果包括以下重量份数原料:椰纤果40份、白砂糖30份、果葡糖浆8份、羧甲基纤维素钠1份、食用香精0.5份、饮用水适量;
蜜制椰果的制作方法包括以下步骤:(1)将椰纤果进行复水脱酸,(2)将白砂糖、果葡糖浆和羧甲基纤维素钠混合加入饮用水,熬制成糖液浓度约为40%的糖胶溶液,(3)将椰纤果加入到糖胶溶液中煮1h,随后加入食用香精再煮4min,(4)将糖煮后的椰纤果至于常压条件下静置,进行糖渍1h,(5)将椰纤果捞出沥干糖液进行热风干燥至含水量为15%,(6)将干燥后的椰纤果粉碎成尺寸小于5mm的颗粒。
冰淇淋的制作方法包括以下步骤:
(1)原料混合:按原料配比取椰子原浆、荔枝原浆、白砂糖、麦芽糖、全脂乳粉、脱脂乳粉、精炼椰子油、奶油、乳化剂、增稠剂、饮用水,在高速搅拌下混合均匀;
(2)巴氏杀菌:在85℃下快速杀菌20s;
(3)均质:将所得浆料冷却至65 ℃,然后采用二级均质法,一级均质压力为18MPa,均质12min,二级均质压力为4MPa,均质5min,均质完毕立即冷却至4℃;
(4)老化:在4℃下进行老化5h;
(5)膨化:在凝冻机内进行膨化,膨化温度为-28℃,膨化率控制在70%-100%;
(6)灌注:通过直管直接把浆料灌注到杯子内;
(7)加料:在冰淇淋的表面撒上一层蜜制椰果;
(8)密封速冻包装:在杯子上面盖上盖子,然后在-35℃下装盘,随后送至-35℃的隧道内进行速冻,最后装箱,在-18℃恒温条件下冷藏。

Claims (4)
1.荔枝椰子口味冰淇淋,其特征在于,所述冰淇淋包括以下重量份数原料:椰子原浆5-30份、荔枝原浆5-15份、蜜制椰果3-8份、白砂糖5-15份、麦芽糖1-6份、全脂乳粉10-15份、脱脂乳粉10-15份、精炼椰子油1-10份、奶油8-12份、乳化剂0.4-1份、增稠剂0.1-1份、饮用水适量。
2.根据权利要求1所述荔枝椰子口味冰淇淋,其特征在于,所述椰子原浆是将新鲜的椰汁和椰肉一起打磨成果浆即得;所述荔枝原浆是将荔枝去壳去核得到果肉,用水蒸汽热烫2-3min,再将果肉迅速投入配制好的护色浆中浸泡冷却25-30min,随后放入高速搅拌机中破碎打浆,破碎打浆时喷雾添加浓度为0.5%-0.8%的维生素C,防止果肉与空气接触发生氧化褐变,得到白色的荔枝果浆。
3.根据权利要求1所述荔枝椰子口味冰淇淋,其特征在于,所述蜜制椰果包括以下重量份数原料:椰纤果30-50份、白砂糖25-35份、果葡糖浆5-10份、羧甲基纤维素钠0.9-1.2份、食用香精0.1-1份、饮用水适量;蜜制椰果的制作方法包括以下步骤:(1)将椰纤果进行复水脱酸,(2)将白砂糖、果葡糖浆和羧甲基纤维素钠混合加入饮用水,熬制成糖液浓度为40%的糖胶溶液,(3)将椰纤果加入到糖胶溶液中煮1h,随后加入食用香精再煮3-5min,(4)将糖煮后的椰纤果至于常压条件下静置,进行糖渍1h,(5)将椰纤果捞出沥干糖液进行热风干燥至含水量为12%-18%,(6)将干燥后的椰纤果粉碎成尺寸小于5mm的颗粒。
4.根据权利要求1所述荔枝椰子口味冰淇淋,其特征在于,所述冰淇淋的制作方法包括以下步骤:
(1)原料混合:按原料配比取椰子原浆、荔枝原浆、白砂糖、麦芽糖、全脂乳粉、脱脂乳粉、精炼椰子油、奶油、乳化剂、增稠剂、饮用水,在高速搅拌下混合均匀;
