Abstract
以可鲜食的脱水10%~50%的鲜葡萄与牛奶或羊奶配制加工成的一种纯天然乳汁葡萄罐装食品。可使更多的远离葡萄产地的人们在一年四季都能在饮用牛奶的同时品尝到酸甜适口的鲜葡萄。从而提供了一种口感好、营养丰富的风味独特的食品。
Description
本发明涉及以葡萄为主要原料加工的食品,具体为以鲜葡萄加奶汁的罐装食品。
葡萄是一种酸甜适口的浆果类水果;含有丰富的葡萄糖、果糖、果胶、有机酸、磷、钾、钙、铁等矿物质、多种维生素(VA、VB、VC、VB6等)及多种氨基酸,葡萄皮中还含有类似苯酚的化学物质,因而具有独特杀灭病毒的能力;据有关资料记载:葡萄有利筋骨、益气补血、除烦解闷、健胃利尿、治疗瘘痹等功能;如用绿葡萄干加工成的纳吐罗素药物可治疗神经衰弱等疾病。另据报导葡萄还据有抗癌作用。因此,葡萄不仅是一种人们喜爱吃的水果;而且是一种富含多种营养成分对人体健康十分有益的一类浆果类水果。而可供鲜食的优质葡萄只适合于日夜温差较大的干旱地区生长,如中国的北方和西北地区,尤以中国新疆土鲁番产的无核白葡萄,有水果世界“绿珍珠”的美称,是极珍贵的鲜食葡萄品种之一,但由于鲜葡萄的保鲜期短及交通运输等问题,长期以来,大多数人只能吃到葡萄干,而难以品尝到它的鲜果。传统的糖水葡萄罐头,无论从口味和营养价值而言,也远远不能适应人们对天然食品的需求,因而不受欢迎。
本发明的目的以优质鲜食葡萄为主要原料,添加奶汁,开发出一种罐装食品,使人们在一年四季,在喝饮奶汁的同时,品尝到酸甜适口、营养丰富的鲜葡萄,从而提供一种口感好、营养丰富的食品。
随着科学技术的进步,鲜奶或奶汁的长期保鲜和存放得到解决;鲜葡萄经一定方法处理后也可以较长时间存放,为此,以鲜葡萄为主要原料,与奶汁加工成营养丰富的罐装食品成为可能。通过反复试验,本发明的主要技术特征是以鲜食葡萄脱水10%~50%的脱水鲜葡萄与奶汁配制加工而成的罐装食品,所述奶汁是以鲜奶为主要成分添加防腐剂、增稠剂、调味剂、稳定剂等辅料的奶液,所述鲜奶是指鲜牛奶或鲜羊奶中的任一种,其含乳量为30%以上,也可用奶粉加水复原后的奶液代替鲜奶。脱水葡萄和奶汁配制比例(重量),可以是5~50∶95~50;其具体制作步骤首先选用饱满、成熟适度(90%~95%)的优质鲜食葡萄,经高锰酸钾水溶液消毒,清水洗净,经快速冷浸制干液浸渍处理后,漂洗干净,然后进行晾晒或加热脱水,控制脱水率为10%~50%,制得脱水葡萄备用;选用鲜奶(鲜奶按GB5408-85标准)经过滤,均质后,添加入防腐剂、增稠剂、调味剂(可根不同口味而异)稳定剂等天然辅料,搅拌混匀,均质,加工成原料奶汁,最后将加工好的原料奶汁加到已装好葡萄的罐中;经加热排气,加盖封罐,灭菌等工艺加工制成葡萄奶汁罐装食品。所述葡萄是指可鲜食和脱水的无核白葡萄、牛奶葡萄或京早晶中的任一种。脱水葡萄以脱水15%~25%较好,最好是脱水20%。
本发明的脱水葡萄加奶汁的罐装食品,其主要原料和辅料均属天然食品,使人们在日常饮用营养价值极高的奶液时,可同时品尝到酸甜适口的鲜葡萄,由于加工成的葡萄奶汁罐装食品保存期长,并便于运输,使更多的人可在一年四季,远离葡萄产地的任何地方,都能品尝到此种营养丰富、风味独特的食品。

实例1
选用新鲜饱满,无霉烂、无病虫害、90%成熟度的新疆无核白葡萄,剪枝使成10颗粒左右的小串;用流动清水冲洗2分钟;以0.05%的高锰酸钾水溶液浸泡5分钟;再用清水冲洗干净。然后在醇溶油碱乳液(一种制干液:由氢氧化钾(化学纯)0.6g加入95%乙醇6ml混匀,再加入3.7ml的油酸乙酯,搅拌均匀,在搅拌下加入1000ml 3%的碳酸钾水溶液配制而成)中浸渍1分钟,捞出漂洗干净,使果面无残留药液;然后在35℃的鼓风干燥箱中烘烤9小时,脱水率15%;将已脱水葡萄从枝上摘下,选择颗粒大小均匀的葡萄,按每瓶325Kg装入已灭菌的650ml四旋口玻璃瓶中待用;选用合格鲜牛奶100Kg,用纱布过滤除去尘土和杂质,经标准化处理(GB5048-85)牛乳的含脂率3%,通过均质机均质,置于不锈钢配料缸中,加入蜂蜜500g、乳酸链球菌素(浙江省天台制药厂银象分厂生产)50g、亚麻籽胶(又名富兰克胶内蒙古大漠生化制品有限责任公司产)30g、胡椒粉10g、蔗糖脂肪酸酯(SFE9-16浙江杭州市桐庐化工公司产)20g、乙基麦芽酚(河南省开封市天虹化工厂产)1g、D-异抗坏血酸钠(河南郑州民泰食品保鲜剂厂产)25g,魔芋精粉30g(四川达川地区魔芋综合开发总厂产),搅拌均匀,采用低压均质机均质,压力为5Mpa,配制成原料牛奶汁。将已配好的牛奶汁分别按每瓶325g装入已装好325g脱水葡萄的玻璃瓶中;加热60℃,排气5分钟后,旋紧盖、封罐;在121℃灭菌3分钟(F0=3),冷却入库,7天后检验合格即可提供可食用的含金黄色无核白葡萄的乳白色奶汁的罐装食品。
