Abstract
本发明提供一种以酸角(又名罗望子,属木科,罗望子属)为原料制取具特殊风味果汁饮料的方法,系采用分拣-清洗-去壳-浸渍-过滤-澄清的方法获得原汁,再配以糖、柠檬酸、醋酸、酒石酸等,成各种风味的天然饮料。这种饮料具有酸角的消食化积,养肝明目,止渴消热,散痞驱虫等功效。本发明还公开了酸角的营养成份,由于酸角中维生素B1,B2,E和无机盐钾的含量高,还可作为某些营养剂的补充。
Description
本发明属于果汁饮料的加工。
现国内尚无工业化正常生产酸角饮料的先例。
酸角又名酸豆、罗汉豆、罗晃子,属苏木料(豆科),罗望子属。(Tamarldus Indlcus)产于非洲、亚洲的印度、缅甸、巴基斯坦、中国。我国的产地主要分布于云南、广东、四川。酸角为多年生木本植物,树高1-12米,其荚果呈长园形或线形,壳质外皮,肉质中皮,革质内皮,荚果的中肉皮为可食部份,约占果实的23.9-50%。据分析每100克酸角的可食部份含:
脂肪 0.60克
蛋白质 6.50克
碳水化合物 51.45克
水份 16.59克
总酸(以酒石酸汁) 14.16克
粗纤维 5.88克
灰份 3.90克
还含有维生素A原2.15国际单位,维生素B10.425克,维生素B20.395毫克,维生素C10.80毫克,维生素E0.694毫克,维生素PP0.95毫克。其所含蛋白质中富含18种氨基酸,其中包括人体必需的八种氨基酸,氨基酸总量占蛋白质的70.30%,
人体必需氨基酸占蛋白质的21.69%。酸角可食部份中还含有钾、铁、磷、钙、锌、镁、铜、锰、硒等元素,尤以钾含量丰富,每100克酸角可食部份中含钾1900毫克,占无机盐总量的48.71%。
酸角所含氨基酸的种类,数量以及总酸(以酒石酸计)无机盐钾,维生素B1,B2,E都较玫瑰茄、弥猴桃,刺梨、山楂、余甘子高。
“中国高等植物图鉴”本草纲目”等书籍中,均对酸角的药理作用进行了描述,指出酸角的性、味、功效为甘、酸、平。人们食用酸角具有消食化积,养肝明目,止渴消热、散痞驱虫等功效。
本发明的目的是开创一条开发利用丰富的野生植物资源-酸角的新途径,即利用酸角的荚果制备饮料。
本发明的特征在于,这种天然饮料的原料是一种植物-酸角的果实,其制备方法是用分拣-清洗-去壳-热水浸渍-过滤-澄清的步骤提取酸角原汁(含酸量5克/1000毫升)。其配方是酸角原汁为主,配以酒石酸、柠檬酸、醋酸、糖及其他辅助成分制作清凉饮料,或将原汁浓缩制作浓缩汁及加糖果汁。如需配制汽水,只需在清凉饮料中加入可食用的二氧化碳气体即可。酸角饮料中不添加任何食用色素和糖精,是一种具有独特风味的天然果汁饮料。
其生产工艺流程为:
经实践证明,通过上述工艺流程实施基本达到了本发明的目的。
本发明的实施例:
实施例1:首先对酸角果实进行分拣,将劣质果剔出,清洗,破碎,去壳。用4-5倍重量的热水(80℃左右)浸泡15-30分钟,共用热水浸泡2-3次,浸提液汇集,过滤,澄清得到含酸量0.5%(1000毫升汁含酒石酸5克)的酸角原汁。含酸量的测定用中和法滴定。
以100毫升-500毫升的酸角原汁,加入白糖100-120克,酒石酸0-2.5克,加水至1000毫升,混合均匀,即成酸角清凉饮料。
实施例2:在实施例1的基础上,加入可食用的二氧化碳气体,定量灌装可成酸角汽水。
实施例3:将含酸量0.5%的酸角原汁浓缩至含酸量为5%,即为浓缩酸角汁。杀菌后包装贮存。
实施例4:在实施例3的基础上,取浓缩酸角汁200毫升,加入白糖420-500克,再添加水至1000毫升,混合均匀,加热杀菌包装。
Claims (3)
1、酸角饮料的制备方法,其特征在于:
a).以酸角(罗望子属Tamaridus Indicus)的果实的肉质部份为原料,
b)将酸角经分拣-清洗-去壳-热水浸渍-过滤-澄清等步骤处理,
c).以上述制得的酸角原汁,浓缩汁为主,配以酒石酸,柠檬酸,醋酸,糖等辅助成分配制成饮料。
2、依照权利要求1所述的方法,其特征在于每次用酸角果实重量4-5倍的热水(80℃左右)浸泡15-30分钟,浸泡2-3次,浸提液汇集、过滤、澄清得到含酸量0.5%的酸角原汁,酸角原汁经浓缩至含酸量为5%时,即得浓缩酸角汁。
3、依照权利要求1和2所述的方法,其特征在于分别将酸角原汁和浓缩酸角汁按下述方法配成饮料:
a).酸角清凉饮料
酸角原汁100-500毫升 或浓缩酸角汁200毫升
白糖 100-120克 白糖 420-500克
酒石酸 0-2.5克 加水至1000毫升
加水至1000毫升
b).酸角汽水:在a)中冲入食用二氧化碳气体。
