本发明属于食品加工技术领域,具体公开了一种山药挂面及其制备方法。以重量份数计,该山药挂面由以下原料制成:山药35~45份、玉米粉13~18份、小麦面粉10~16份、黑芝麻粉3~6份、莲子粉3~6份、地瓜叶汁7~12份、食用盐 2~3份、淀粉酶2~3份、谷朊粉2~3份、水120~160份。经混合过筛、揉制面团、静置熟化、多次压延、三区烘烤等工序得到成品。制成的挂面成品含能为人体补充多种氨基酸、维生素、蛋白质、矿物质等营养物质,挂面颜色均匀、表面光滑,口感佳,不易断节,耐煮,汤色清。

技术领域
本发明属于食品加工技术领域,具体涉及一种山药挂面及其制备方法。
背景技术
近年来,我国城乡居民粮食消费结构中,杂粮比重大幅度下降,低于粮食消费量的8%,而精米精面比例过高。由于膳食结构等多种原因,使高血压、心血管、糖尿病等疾病的病率不断上升。研究表明,杂粮中富含蛋白质、膳食纤维、不饱和脂肪酸、维生素、矿质元素等营养和保健成分,不仅营养丰富,而且具有良好的保健功效,对“富贵病”有很好的预防和治疗作用。
山药不仅可以为人们提供大量的植物蛋白,是天然滋补强身的食品,而且还有很高的药用价值,可以调节人体新陈代谢、降低血压、减少胆固醇含量,有预防和治疗多种疾病、延年益寿之功效。山药是著名的食药,其香味浓郁,营养丰富,含有18种氨基酸,所含麦角甾醇可转变为维生素D,有增强人体抵抗疾病和预防感冒的功效;山药还有抗肿瘤作用,可预防肝硬化和血管硬化、降脂降压的功效。正因为山药对人体有以上种种益处,山药面条一直是大家非常喜欢的一种食品。
发明内容
本发明所要解决的第一个技术问题是提供一种山药挂面,以重量份数计,该山药挂面由以下原料制成:山药35~45份、玉米粉13~18份、小麦面粉10~16份、黑芝麻粉3~6份、莲子粉3~6份、地瓜叶汁7~12份、食用盐 2~3份、淀粉酶2~3份、谷朊粉2~3份、水120~160份。
优选的,上述山药挂面,以重量份数计,该山药挂面由以下原料制成:山药42份、玉米粉15份、小麦面粉14份、黑芝麻粉5份、莲子粉5份、地瓜叶汁10份、食用盐 3份、淀粉酶3份、谷朊粉3份、水150份。
优选的,上述山药挂面中,所述山药为铁棍山药。
其中,上述山药挂面中,所述谷朊粉的水分8.4~8.6%,灰分0.83~0.87%。

(1)将山药蒸熟后,去皮,加食用盐和地瓜叶汁,捣成山药泥,备用;以重量份数计,山药35~45份、地瓜叶汁7~12份、食用盐1~1.5份;
(2)将以下原料按照重量份配比:玉米粉13~18份、小麦面粉10~16份、黑芝麻粉3~6份、莲子粉3~6份混合,所得混合粉过筛,除去杂质;
(3)将上述山药泥、混合粉、淀粉酶2~3份、谷朊粉2~3份混合,加入盐水快速搅拌15~20min,形成絮状面团,然后静置20~30min;
(4)静置好的面团送入压面机压延,经过4道压延,每次压延间隔60~70s;
(5)将压延后的面片切条,送入烘干室依次经过一区、二区和三区3个温度区域烘烤,一区的温度为24.2~24.6℃,相对湿度 90~93%,时间为30min~40min;二区的温度为33.3~33.8℃、相对湿度87.2~88.4%,时间40min~50min;三区的温度为 42.3~42.6℃、相对湿度60.6~61.4%,时间70min~90min;
(6)将烘干后的面条切成包装要求的标准长度240mm,称重、 包装、 入库。
其中,上述杂粮挂面的制备方法,步骤(2)中过筛指的是过120~150目筛。
其中,上述杂粮挂面的制备方法,步骤(3)中所述盐水为食用盐 0.5~2份加水120~160份配制而成。
其中,上述杂粮挂面的制备方法,步骤(4)中压延得到的面片厚度分别是2.3mm、1.7mm、1.3mm、1.1mm。
上述山药挂面原料中:
山药:山药中含皂苷、粘液质、胆碱、山药碱、淀粉、粗纤维、糖蛋白、自由氨基酸、多酚氧化酶、钾、磷、钙、镁、铁、锌、铜、锰等。人类所需的18种氨基酸中,山药中含有16种。《本草纲目》指出:山药治诸虚百损、疗五劳七伤、去头面游风、止腰痛、除烦热、补心气不足、开达心孔、多记事、益肾气、健脾胃。
地瓜叶:地瓜叶中含有叶绿素、维生素A、C、E,植固醇、多酚、钾、铁、磷,以及丰富的抗氧化物,可以促进消化、健胃、通便,提高免疫功能、止血、降糖、保护视力、延缓衰老和护肤等。
玉米:玉米素有长寿食品的美称,含有丰富的蛋白质、脂肪、维生素、微量元素、纤维素及多糖等。玉米中含有的粗纤维,比精米、精面高4-10倍;玉米中含有丰富的不饱和脂肪酸,尤其是亚油酸的含量高达60%以上,它和玉米胚芽中的维生素E协同作用,对冠心病、动脉粥样硬化、高脂血症及高血压等都有一定的预防和治疗作用。玉米胚尖所含的营养物质有增强人体新陈代谢、调整神经系统功能。玉米中含有多种抗癌因子,如谷胱甘肽、叶黄素和玉米黄质、微量元素硒和镁等。玉米有调中开胃及降血脂、降低血清胆固醇的功效。
莲子:莲子含多量的淀粉和棉子糖、蛋白质、钙、磷、铁,亦含有β-谷甾醇、β-谷甾醇脂肪酸酯,以及丰富的维生素C、葡萄糖、叶绿素、棕榈酸及谷胱甘肽等。中医认为莲子性平味甘、涩,入心、肺、肾经。具有补脾、益肺、养心、益肾和固肠等作用。善于补五脏不足,通利十二经脉气血,其所含的氧化黄心树宁碱具有防癌抗癌的保健功能;其所含非结晶形生物碱N-9有降血压作用;莲子中所含的棉子糖,是老少皆宜的滋补品,对于久病、产后或老年体虚者,更是常用营养佳品。
黑芝麻:黑芝麻含有大量的脂肪和蛋白质,还含有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分。有健胃、保肝、促进红细胞生长的作用,同时可以增加体内黑色素,具有“补肝肾,滋五脏,益精血,润肠燥”等功效,被视为滋补圣品。
与现有技术相比,本发明的有益效果是:本发明山药挂面各原料配比科学合理,具有延缓衰老、防癌抗癌、降压降脂、利于消化等功效,人们通过食用本发明的面条就可以摄取各种营养成分。制备过程中添加杂粮微细粉磨混合,使挂面中的营养物质更加有利于人体吸收,并且有利于加工生产,在生产中对面粉面筋的影响较小,制成的挂面颜色均匀、表面光滑,口感佳,不易断节,耐煮,汤色清;采用反复压延工艺,减少了物料的浪费、原料成分的丢失浪费,较好的保留原料中的营养成分,制成的成品能为人体补充多种氨基酸、胆碱、维生素、蛋白质、矿物质等营养物质。
具体实施方式
本发明提供了一种山药挂面,以重量份数计,该山药挂面由以下原料制成:山药35~45份、玉米粉13~18份、小麦面粉10~16份、黑芝麻粉3~6份、莲子粉3~6份、地瓜叶汁7~12份、食用盐 2~3份、淀粉酶2~3份、谷朊粉2~3份、水120~160份。

优选的,上述山药挂面中,所述山药为铁棍山药,铁棍山药中含皂苷、粘液质、胆碱、山药碱、淀粉、糖蛋白、自由氨基酸、多酚氧化酶、维生素C、碘质、16种氨基酸,还有铁、铜、锌、锰、钙等多种微量元素。其味甘、性平、无毒、有健脾、补肺、固肾、益脑、益精养颜、抗衰老、抗肿瘤、抗疲劳、抗有害物质刺激、调节代谢、增强免疫机能、促进生长、调节内分泌、调节心肺功能、兴奋制血系统、调节神经系统。
其中,上述山药挂面中,所述谷朊粉的水分8.4~8.6%,灰分0.83~0.87%。
进一步的,本发明提供了上述山药挂面的制备方法,该方法具体包括以下步骤:
(1)将山药蒸熟后,去皮,加食用盐和地瓜叶汁,捣成山药泥,备用;以重量份数计,山药35~45份、地瓜叶汁7~12份、食用盐1~1.5份;
(2)将以下原料按照重量份配比:玉米粉13~18份、小麦面粉10~16份、黑芝麻粉3~6份、莲子粉3~6份混合,所得混合粉过120~150目筛,除去杂质;
(3)将上述山药泥、混合粉、淀粉酶2~3份、谷朊粉2~3份混合,加入盐水快速搅拌15~20min,形成絮状面团,然后静置熟化20~30min;面团静置过程可使面粉粒籽和颗粒面团进一步吸水胀润,能够使面团充分熟化以形成质地均匀、粘弹性较好的面筋网络组织,使面条的口感更加细腻、劲道;
(4)静置好的面团送入压面机压延,经过4道压延,压延得到的面片厚度分别是2.3mm、1.7mm、1.3mm、1.1mm,每次压延间隔60~70s;
(5)将压延后的面片切条,送入烘干室依次经过一区、二区和三区3个温度区域烘烤,一区的温度为24.2~24.6℃,相对湿度 90~93%,时间为30min~40min;二区的温度为33.3~33.8℃、相对湿度87.2~88.4%,时间40min~50min;三区的温度为 42.3~42.6℃、相对湿度60.6~61.4%,时间70min~90min;严格控制每个区的烘烤温度和湿度,能够很好地控制挂面表层水分的蒸发, 防止表里干燥速度不一,更好地保持了面条的物理特性,以保证面条的口感和营养;
(6)将烘干后的面条切成包装要求的标准长度240mm,称重、 包装、 入库。
其中,上述杂粮挂面的制备方法,步骤(3)中所述盐水为食用盐 0.5~2份加水120~160份配制而成。
以下结合具体的实施例对本发明作进一步的解释和说明,但并不因此限制本发明的保护范围。实施例中所用原料:谷朊粉的水分8.6%,灰分0.85%。
实施例1
山药挂面由以下步骤制备得到:
(1)将铁棍山药45kg蒸熟后,去皮,加食用盐1kg和地瓜叶汁8kg,捣成山药泥,备用;
(2)将以下原料按照重量份配比:玉米粉16kg、小麦面粉13kg、黑芝麻粉4kg、莲子粉5kg混合,所得混合粉过150目筛,除去杂质;
(3)将上述山药泥、混合粉、淀粉酶2kg、谷朊粉3kg混合,加入盐水快速搅拌18min,形成絮状面团,然后静置熟化25min;所述盐水为食用盐 2kg加水140kg配制而成;
(4)静置好的面团送入压面机压延,经过4道压延,压延得到的面片厚度分别是2.3mm、1.7mm、1.3mm、1.1mm,每次压延间隔70s;
(5)将压延后的面片切条,送入烘干室依次经过一区、二区和三区3个温度区域烘烤,一区的温度为24.4℃,相对湿度 90%,时间为40min;二区的温度为33.8℃、相对湿度88.2%,时间40min;三区的温度为 42.5℃、相对湿度60.8%,时间80min;
(6)将烘干后的面条切成包装要求的标准长度240mm,称重、 包装、 入库。
成品经检验水分12.8%,弯曲折断率 6.9%,熟断条率 3.4%,烹调损失 7.3%。面条色泽均匀光滑,无异味,不牙碜,口感爽滑略有杂粮特有的香味,检验指标均符合杂粮挂面检验标准。
实施例2
山药挂面由以下步骤制备得到:
(1)将山药42kg蒸熟后,去皮,加食用盐1.5kg和地瓜叶汁10kg,捣成山药泥,备用;
(2)将以下原料按照重量份配比:玉米粉15kg、小麦面粉14kg、黑芝麻粉5kg、莲子粉5kg混合,所得混合粉过130目筛,除去杂质;
(3)将上述山药泥、混合粉、淀粉酶3kg、谷朊粉3kg混合,加入盐水快速搅拌20min,形成絮状面团,然后静置熟化30min;所述盐水为食用盐 1.5kg加水150kg配制而成;
(4)静置好的面团送入压面机压延,经过4道压延,压延得到的面片厚度分别是2.3mm、1.7mm、1.3mm、1.1mm,每次压延间隔60s;
(5)将压延后的面片切条,送入烘干室依次经过一区、二区和三区3个温度区域烘烤,一区的温度为24.6℃,相对湿度 91%,时间为50min;二区的温度为33.5℃、相对湿度87.2%,时间45min;三区的温度为 42.6℃、相对湿度61.2%,时间90min;
(6)将烘干后的面条切成包装要求的标准长度240mm,称重、 包装、 入库。
成品经检验水分13.1%,弯曲折断率 7.2%,熟断条率 3.4%,烹调损失 7.1%。面条色泽均匀光滑,无异味,不牙碜,口感爽滑略有杂粮特有的香味,检验指标均符合杂粮挂面检验标准。
