技术领域
本发明涉及一种食品的加工方法,尤其是涉及一种营养山药脯的加工工艺。
背景技术
山药具有营养滋补、诱生搅扰素、增强机体免疫力、调度内排泄、补气通脉、镇咳祛痰、平喘等感化,能改善冠状动脉及微轮回血流,可治疗慢性气管炎、冠芥蒂、心绞痛等。铁棍山药具有补气润肺的功用,既可切片煎汁当茶饮,又可切细煮粥喝,对虚性咳嗽及肺痨发烧患者都有很好的治疗结果。春季天气较枯燥,易伤肺津,招致阴虚,出现口干、咽干、唇焦、干咳等病症,此时进补山药最为适合,因山药是安然平静之品,为滋阴养肺之上品。
新鲜的山药不易贮藏,加工成营养山药脯后食用方便,营养丰富,商品价值提高。
发明内容
本发明所要解决的技术问题是以山药为原料,采用护色、硬化、漂烫、糖渍、烘制等方法加工生产,充分保留了原料中的营养物质,方法简单,便于掌握。
本发明解决其技术问题所采取的技术方案是:一种营养山药脯的加工工艺,其特征在于:采用原料选择→清洗→去皮→切片→护色与硬化→漂洗→漂烫→糖渍→烘制→包装的加工步骤:
(1)原料选择:选择大小均匀、无病虫害、无损伤、无腐烂,条形直顺的新鲜山药为原料;
(2)清洗:用水洗净山药外皮上的泥沙,清洗时注意不要损伤山药的外皮;
(3)去皮、切片:用不锈钢刀刮去外皮,挖尽斑眼,斜切成2-3cm长、4-5mm厚的薄片,要求薄片大小均匀一致;
(4)护色与硬化:将去皮切片的山药立即投入0.3%的柠檬酸、0.1%的氯化钙和0.45%的氯化钠、1%的蜂蜜混合液中护色硬化;
(5)漂洗、漂烫:山药片捞出后,用清水反复冲洗,洗去护色液,然后放入沸水中漂烫2-3min;
(6)糖渍:将经漂烫的山药片放入缸中,一层山药一层绵白糖,糖渍12h;然后将山药片连同糖液一起移至锅中,加入适量的饴糖、玫瑰香精和甘草,调整糖液浓度为45%,加热沸煮20-25min,再将山药片连同糖液一起移至缸中浸渍20-24h;捞出山药片,加入适量的麦芽糖、橘子精油和蜂蜜,调整糖液浓度达58%,倒入山药片,沸煮30min,捞出,沥干糖液;
(7)烘制、包装:将山药片沥尽糖液后,摊于烘盘上,入烘房,在55-65℃下烘至山药片含水量达18-20%为止,烘制期间翻动2-4次,待制品晾凉后,即可进行包装。

具体实施方式
实施例1:
一种营养山药脯的加工工艺,主要采用以下步骤:
(1)原料选择:选择大小均匀、无病虫害、无损伤、无腐烂,条形直顺的新鲜山药为原料;
(2)清洗:用水洗净山药外皮上的泥沙,清洗时注意不要损伤山药的外皮;
(3)去皮、切片:用不锈钢刀刮去外皮,挖尽斑眼,斜切成4cm长、6mm厚的薄片,要求薄片大小均匀一致;
(4)护色与硬化:将去皮切片的山药立即投入0.2%的苹果酸、0.18%的氯化钙和0.23%的氯化钠、2%的蜂蜜混合液中护色硬化;
(5)漂洗、漂烫:山药片捞出后,用清水反复冲洗,洗去护色液,然后放入沸水中漂烫4-6min;
(6)糖渍:将经漂烫的山药片放入缸中,一层山药一层蔗糖,糖渍7h;然后将山药片连同糖液一起移至锅中,加入适量的果糖、淀粉糖浆和玫瑰茄,调整糖液浓度为40%,加热沸煮18min,再将山药片连同糖液一起移至缸中浸渍15h;捞出山药片,加入适量的冰糖、香草香精和嫩荷蕊,调整糖液浓度达55%,倒入山药片,沸煮28min,捞出,沥干糖液;
(7)烘制、包装:将山药片沥尽糖液后,摊于烘盘上,入烘房,在70℃下烘至山药片含水量达12-15%为止,烘制期间翻动1-2次,待制品晾凉后,即可进行包装。
实施例2:
一种营养山药脯的加工工艺,主要采用以下步骤:
(1)原料选择:选择大小均匀、无病虫害、无损伤、无腐烂,条形直顺的新鲜山药为原料;
(2)清洗:用水洗净山药外皮上的泥沙,清洗时注意不要损伤山药的外皮;
(3)去皮、切片:用不锈钢刀刮去外皮,挖尽斑眼,斜切成2-3cm长、4-5mm厚的薄片,要求薄片大小均匀一致;

(6)糖渍:将经漂烫的山药片放入缸中,一层山药一层红糖,糖渍15-18h;然后将山药片连同糖液一起移至锅中,加入适量的麦芽糖、柠檬香精和甜蜜素,调整糖液浓度为55%,加热沸煮35min,再将山药片连同糖液一起移至缸中浸渍5-10h;捞出山药片,加入适量的甜菊糖苷、葡萄汁和茉莉花粉,调整糖液浓度达66%,倒入山药片,沸煮45min,捞出,沥干糖液;
(7)烘制、包装:将山药片沥尽糖液后,摊于烘盘上,入烘房,在78-85℃下烘至山药片含水量达8-15%为止,烘制期间翻动2-4次,待制品晾凉后,即可进行包装。

1.一种营养山药脯的加工工艺,其特征在于:采用原料选择→清洗→去皮→切片→护色与硬化→漂洗→漂烫→糖渍→烘制→包装的加工步骤:
(1)原料选择:选择大小均匀、无病虫害、无损伤、无腐烂,条形直顺的新鲜山药为原料;
(2)清洗:用水洗净山药外皮上的泥沙,清洗时注意不要损伤山药的外皮;
(3)去皮、切片:用不锈钢刀刮去外皮,挖尽斑眼,斜切成2-3cm长、4-5mm厚的薄片,要求薄片大小均匀一致;
(4)护色与硬化:将去皮切片的山药立即投入0.3%的柠檬酸、0.1%的氯化钙和0.45%的氯化钠、1%的蜂蜜混合液中护色硬化;
