技术领域
本发明涉及一种食品的加工方法,尤其是涉及一种山药保健脯的加工工艺。
背景技术
山药具有营养滋补、诱生搅扰素、增强机体免疫力、调度内排泄、补气通脉、镇咳祛痰、平喘等感化,能改善冠状动脉及微轮回血流,可治疗慢性气管炎、冠芥蒂、心绞痛等。铁棍山药具有补气润肺的功用,既可切片煎汁当茶饮,又可切细煮粥喝,对虚性咳嗽及肺痨发烧患者都有很好的治疗结果。春季天气较枯燥,易伤肺津,招致阴虚,出现口干、咽干、唇焦、干咳等病症,此时进补山药最为适合,因山药是安然平静之品,为滋阴养肺之上品。
新鲜的山药不易贮藏,加工成山药保健脯后食用方便,营养丰富,商品价值提高。
发明内容
本发明所要解决的技术问题是以山药为原料,采用热烫、糖渍、糖煮、上糖衣、烘制等方法加工生产,充分保留了原料中的营养物质,方法简单,便于掌握。
本发明解决其技术问题所采取的技术方案是:一种山药保健脯的加工工艺,其特征在于:采用选料、处理→热烫→糖渍→糖煮→上糖衣→烘制→包装的加工步骤:
(1)原料处理:选择大小均匀、粗细一致、无碰伤、无虫害的山药为原料,用刮皮机将山药皮去掉,用清水洗净后,切成圆片,将切好的山药用清水冲洗并去除碎屑和不成形的小块,以保证大小一致;
(2)热烫:将清洗过的山药倒入沸水中,加入少许柠檬酸和精盐,煮制6-8min,以煮熟为宜;
(3)糖渍:将预煮的山药置于缸内,一层山药一层川白糖进行糖渍,时间4-6h;
(4)糖煮:将糖渍的山药连同糖液一起置于夹层锅中,加入红糖姜汁,调整糖液浓度为45%,煮制50min后,连同糖液入缸浸渍12-15h捞出,倒入58%的糖液煮35min,使山药片呈透明状,捞出控净糖液;
(5)上糖衣:将控净糖液的山药片拌入糖粉,使表面形成糖霜;
(6)烘制:将山药片置于温度68℃的烘房中烘5-7h即成;
(7)包装:真空包装,杀菌后即为成品。
有益效果:本发明产品口味香甜、组织饱满、色泽洁白、口味清甜、韧性适中,呈半透明状,具有山药特有清香的风味。本产品富含膳食纤维,有利于保护胃粘膜、帮助消化,还具有健脾补肺、固肾益精、降低血压、血糖的功效,是一种营养保健、经济实惠的绿色健康食品。
具体实施方式
实施例1:
一种山药保健脯的加工工艺,主要采用以下步骤:
(1)原料处理:选择大小均匀、粗细一致、无碰伤、无虫害的山药、茯苓为原料,用刮皮机将表皮去掉,用清水洗净后,切成圆片,将切好的原料用清水冲洗并去除碎屑和不成形的小块,以保证大小一致;
(2)热烫:将清洗过的薄片倒入沸水中,加入少许蜂蜜和苹果酸,煮制3-4min,以煮熟为宜;
(3)糖渍:将预煮的薄片置于缸内,一层薄片一层蔗糖进行糖渍,时间7-8h;
(4)糖煮:将糖渍的薄片连同糖液一起置于夹层锅中,加入红糖姜汁、甘草、淀粉糖浆,调整糖液浓度为50%,煮制30min后,连同糖液入缸浸渍8-12h捞出,倒入65%的糖液煮28min,使薄片呈透明状,捞出控净糖液;
(5)上糖衣:将控净糖液的薄片拌入有绵白糖和菱角粉配制的混合糖粉,使表面形成糖霜;
(6)烘制:将薄片置于温度75℃的烘房中烘2-5h即成;
(7)包装:真空包装,杀菌后即为成品。
实施例2:
一种山药保健脯的加工工艺,主要采用以下步骤:
(1)原料处理:选择大小均匀、粗细一致、无碰伤、无虫害的山药为原料,用刮皮机将山药皮去掉,用清水洗净后,切成圆片,将切好的山药用清水冲洗并去除碎屑和不成形的小块,以保证大小一致;
(2)热烫:将清洗过的山药倒入沸水中,加入少许氯化钠和柠檬酸,煮制1-2min,以煮熟为宜;
(3)糖渍:将预煮的山药置于缸内,一层山药一层蛋白糖进行糖渍,时间8-10h;
(4)糖煮:将糖渍的山药连同糖液一起置于夹层锅中,加入番茄胡萝卜蔬菜汁、甜菊糖浆、蜂蜜,调整糖液浓度为60%,煮制35min后,连同糖液入缸浸渍10h捞出,倒入70%的糖液煮15min,使山药片呈透明状,捞出控净糖液;
(5)上糖衣:将控净糖液的山药片拌入糖粉,使表面形成糖霜;
(6)烘制:将山药片置于温度85℃的烘房中烘2-3h即成;
(7)包装:真空包装,杀菌后即为成品。
