背景技术
随着人们生活水平的提高,食品、食用调料行业也在发生着变化,调味油在口味以及产品种类上做出了很大的突破,但是很少有食品具有特殊的功效,这越来越不能满足人们对调味油高标准要求,应运市场的发展,调味油行业有待创新发展。
发明内容
本发明为了弥补已有技术的缺陷,提供黄米养胃核桃油及其制备方法。
本发明是通过以下技术方案实现的:黄米养胃核桃油,由以下重量份原料制
成:华东野核桃仁300-320、黑豆60-70、油菇40-50、黄米30-40、苍术40-50、姜厚朴10-20、陈皮40-50、炙甘草 5-10、水、食用酒精适量。
一种黄米养胃核桃油的制备方法,包括以下步骤:
(1)将华东野核桃仁、黑豆、油菇、黄米通过亚临界萃取法提取得到初提油;萃取渣备用;将 其它剩余成分粉碎加水提取,得到水提物,及水提渣;
(2)、将所述的萃取渣、水提渣混合,加入2-3 倍量水,及相当于总重量0.3-0.5% 的碱 性蛋白酶、0.2-0.3% 的复合风味蛋白酶搅拌均匀,加入食用碱,调PH 值为8-9,酶解温度45-55℃,酶解时间5-6 小时;然后,高温高压使酶灭活;过滤,得到酶解液,向酶解液中加入 食用酒精至60-70% 浓度,经过纳滤得提取物;
(3)、取所得初提油的5-8% 重量,与提取物混合,加入适量水,充分搅拌分散,离心、过滤去渣,得分离混合油;
(4)、将分离混合油与剩余的初提油混合,加热至80-95℃,保温20-30 分钟,冷却后,再 除渣即得。
本发明的优点是:黄米是传统的养胃佳品,适合于肠胃不好的人士食用,本发明提取黄米精华,配合苍术燥湿健脾,厚朴除湿散满,陈皮理气化痰,以甘草补脾和中而调诸药等健胃原料,适合于肠胃不好、急慢性胃肠炎、胃、十二指肠溃疡、消化不良的人食用。本发明提供一种简便、营养价值和保健养生、工艺合理的黄米养胃核桃油生产方法,能够为小批量特种油脂生产提供技术支持,适于在食用油生产技术领域推广。
具体实施方式
一种黄米养胃核桃油,由以下重量份(Kg)原料制成:华东野核桃仁320、黑豆70、油菇50、黄米40、苍术40、姜厚朴10、陈皮40、炙甘草 5、水、食用酒精适量。
黄米养胃核桃油的制备方法,包括以下步骤:
(1)将华东野核桃仁、黑豆、油菇、黄米通过亚临界萃取法提取得到初提油;萃取渣备用;将 其它剩余成分粉碎加水提取,得到水提物,及水提渣;
(2)、将所述的萃取渣、水提渣混合,加入2 倍量水,及相当于总重量0.3% 的碱性蛋白酶、0.2% 的复合风味蛋白酶搅拌均匀,加入食用碱,调PH 值为8,酶解温度45℃,酶解时间5小时;然后,高温高压使酶灭活;过滤,得到酶解液,向酶解液中加入食用酒精至60% 浓度,经过纳滤得提取物;
(3)、取所得初提油的5% 重量,与提取物混合,加入适量水,充分搅拌分散,离心、过滤去渣,得分离混合油;

1.黄米养胃核桃油,其特征在于,由以下重量份原料制成:华东野核桃仁300-320、黑豆60-70、油菇40-50、黄米30-40、苍术40-50、姜厚朴10-20、陈皮40-50、炙甘草 5-10、水、食用酒精适量。
2.如权利要求1 所述的一种黄米养胃核桃油的制备方法,其特征在于,包括以下步骤:
(1)将华东野核桃仁、黑豆、油菇、黄米通过亚临界萃取法提取得到初提油;萃取渣备用;将其它剩余成分粉碎加水提取,得到水提物,及水提渣;
(2)、将所述的萃取渣、水提渣混合,加入2-3 倍量水,及相当于总重量0.3-0.5% 的碱
性蛋白酶、0.2-0.3% 的复合风味蛋白酶搅拌均匀,加入食用碱,调PH 值为8-9,酶解温度45-55℃,酶解时间5-6 小时;然后,高温高压使酶灭活;过滤,得到酶解液,向酶解液中加入食用酒精至60-70% 浓度,经过纳滤得提取物;
