本发明涉及白酒的制造领域,具体涉及一种补气健脾保健白酒及其制备方法。
背景技术
白酒是以粮谷为主要原料,以大曲、小曲或麸曲及酒母等为糖化发酵剂,经蒸煮、糖化、发酵、蒸馏而制成的蒸馏酒。又称烧酒、老白干、烧刀子等。酒质无色(或微黄)透明,气味芳香纯正,入口绵甜爽净,酒精含量较高,经贮存老熟后,具有以酯类为主体的复合香味。
白酒又名烧酒、白干,是中国的传统饮料酒,很受中国人欢迎。据《本草纲目》记载:“烧酒非古法也,自元时创始,其法用浓酒和糟入甑(指蒸锅),蒸令气上,用器承滴露。”由此可以得出,我国白酒的生产已有很长的历史。
白酒是中国特有的一种蒸馏酒。白酒的酒度一般在41度以上,多在55度以上,一般不超过65度。低度数白酒是指采用了降度工艺,酒度一般在38度,甚至达到20多度的白酒,简称低度酒。酒的降度一般是采用在母酒中加入高纯度的蒸馏水来实现的。
所谓“酒越陈越香”,多是指38度以上的白酒。这些白酒只需要注明生产日期,不需要注明保质期。但是对于低度数白酒来说,却并非“越陈越香”。研究发现,白酒中的总酸在货架期存放过程中都是上升的,30°酒上升的幅度大一些,平均每年上升20%~28%,38°酒平均每年上升13%~22%。在储存过程中,酸增加的主要原因是:a、白酒在存放过程中出现水解现象,酯水解后生成相应的酸和乙醇。b、酸的挥发系数小,在贮存过程中不易挥发。而白酒中的总酯在货架期存放过程中都是下降的,30°酒下降的幅度大一些,平均每年下降7%~13%,38°酒平均每年下降5%~9%。对于低度酒而言,由于CH3CH2OH浓度较低,H2O浓度较高,正向水解的速度较快,因而水解是造成总酯在货架期存放过程中下降的主要原因。
保健白酒或药酒,一般是以白酒为基酒,但为了具备保健功效而加入了一些药食两用的中药成分,为了保证中药成分的药效,以及方便特定人群的引用,市场上的具有保健功效的药酒,通常都是35度或者度数更低的低度数白酒。因此,保健白酒普遍具有低度数白酒的稳定性较差,存放期间,酸量升高、酯量下降等缺点。

本发明所要解决的技术问题之一是提供一种补气健脾保健白酒。
本发明所要解决的技术问题之二是提供上述补气健脾保健白酒的制备方法。
解决该技术问题的方案是:
一种补气健脾保健白酒,包括下述重量份原料组成:白酒400-800份,炙甘草20-40份,茯苓20-40份,人参20-40份,生姜20-40份。
优选的,
所述白酒为酒度25-38度的白酒。
所述白酒的为清香型或浓香型白酒。
所述的补气健脾保健白酒还可以包括1-9重量份的添加剂。
进一步优选的,所述添加剂,包括下述重量份的组分:3-羟基-2-乙基-4-吡喃酮10-30份,木糖醇20-40份,卡拉胶10-20份。
本发明还提供了所述补气健脾保健白酒的制备方法,其包括下述步骤:
(1)按配比称取各原料,将人参,炙甘草,茯苓和生姜放入白酒中浸泡;
(2)用酒用活性炭进行吸附,过滤。
优选的,
步骤(1)所述浸泡时间为15-30天。
浸泡条件为常温(25±5℃)密封条件下浸泡。
在步骤(2)之后,可以按配比加入添加剂,制得优选的含有添加剂的补气健脾保健白酒。

人参(Panax ginseng C.A.Mey)是多年生草本植物,喜阴凉,叶片无气孔和栅栏组织,无法保留水分,温度高于32度叶片会灼伤,郁闭度0.7-0.8。通常3年开花,5-6年结果,花期5-6月,果期6-9月。生长于北纬33度—48度之间的海拔,数百米的以红松为主的针阔混交林或落叶阔叶林下,产于中国东北、朝鲜、韩国、日本、俄罗斯东部。人参的别称是黄参、地精、神草、百草之王,是闻名遐迩的“东北三宝”之一。性味:味甘、微苦,性温、平。归脾、肺经、心经。补气,固脱,生津,安神,益智。
炙甘草(RADIX GLYCYRRHIZAE PREPARATA),系豆科植物,炙甘草是用蜜烘制的甘草,俗称炮制,就是将蜂蜜置锅中炼成中蜜,改用文火加生甘草片拌炒均匀,3~5min出锅,置烤房或烘箱60~C烘至不粘手时取出,放凉即可。炙甘草为类圆形或椭圆形切片,表面红棕色或灰棕色,微有光泽,切面黄色至深黄色,形成层环明显,射线放射状。炙甘草汤具有益气滋阴,通阳复脉治疗功效。
茯苓,中药名。为多孔菌科真菌茯苓Poria cocos(Schw.)Wolf的干燥菌核。多于7~9月采挖,挖出后除去泥沙,堆置“发汗”后,摊开晾至表面干燥,再“发汗”,反复数次至现皱纹、内部水分大部散失后,阴干,称为“茯苓个”;或将鲜茯苓按不同部位切制,阴干,分别称为“茯苓块”和“茯苓片”。功效:利水渗湿,健脾,宁心。主治:用于水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻,心神不安,惊悸失眠。《本草纲目》:茯苓气味淡而渗,其性上行,生津液,开腠理,滋水源而下降,利小便,故张洁古谓其属阳,浮而升,言其性也;东垣谓其为阳中之阴,降而下,言其功也。
生姜,中药名。是姜科多年生草本植物姜的新鲜根茎,别名有姜根、百辣云、勾装指、因地辛、炎凉小子、鲜生姜。姜的根茎(干姜)、栓皮(姜皮)、叶(姜叶)均可入药。生姜味辛,性微温。归肺、脾、胃经。具有解表散寒、温中止呕、温肺止咳、解毒的功效,常用于风寒感冒,脾胃寒症,胃寒呕吐,肺寒咳嗽,解鱼蟹毒。《金匮要略》:半夏、生姜汁均善止呕,合用益佳;并有开胃和中之功。用于胃气不和,呕哕不安。

本发明所述的补气健脾保健白酒,能最大限度地发挥各种药材的综合作用,酒体柔和,绵甜爽口,诸香谐调,口味爽净,健脾利湿,和胃化浊。适用于脾胃气虚,气短无力,面黄形瘦,食少便溏等,尤其是使用了添加剂之后,解决了低度数白酒稳定性差的问题。现有技术中,白酒通常是不加入添加剂的,但是由于药酒或保健白酒度数较低,随着时间会发生部分酸化,酸值上升,酯量下降,添加剂中的木糖醇可以与酸发生反应,与其反应生成具有芳香味的酯,卡拉胶作为一种分散剂,对补气健脾保健白酒起到了稳定的作用,3-羟基-2-乙基-4-吡喃酮可以除去保健白酒中的中药材的异味。意外地,研究发现:当同时使用3-羟基-2-乙基-4-吡喃酮、木糖醇和卡拉胶时,对于减缓保健白酒中酯量的下降起到了协同增效的作用。本发明所述的补气健脾保健白酒制备方法简单,易保藏。
具体实施方式
下面结合实施例对本发明作进一步描述。
实施例1
取35度白酒600公斤,放入人参30公斤,炙甘草30公斤,茯苓30公斤,生姜30公斤,密封,常温浸泡30天,用酒用活性炭SB-204去除异味及浑浊,过滤,得到实施例1的补气健脾保健白酒。
服法:每日2次,每次温饮20毫升,空腹服。
本发明实施例1的补气健脾保健白酒,200人(20-60岁)连续服用1月后,反映对补气健脾功能效果明显,有效率达到97%,其中效果明显者为88%。
本发明所述的补气健脾保健白酒,能最大限度地发挥各种药材的综合作用,酒体柔和,绵甜爽口,诸香谐调,口味爽净,健脾利湿,和胃化浊。适用于脾胃气虚,气短无力,面黄形瘦,食少便溏等。
实施例2-5
按照表2中实施例2-5的添加剂配方称取各原料,混合均匀,制得添加剂。称取3克添加剂加入到720克实施例1制得的补气健脾保健白酒中,搅拌混合均匀,制成实施例2-5的补气健脾保健白酒。

测试例
检测避光常温密封贮存20个月后,实施例1-5的保健白酒中主要酯类化合物的含量,测试结果见表2。

由实验结果可见,贮存20个月后,实施例1-5的补气健脾保健白酒中几种主要酯类化合物含量维持在了较高水平,保持了良好的芳香味和口感,尤其是实施例2-4使用了添加剂之后,酯类含量更高。
更尤其是,实施例2使用了木糖醇、卡拉胶、3-羟基-2-乙基-4-吡喃酮三者复配,较实施例3-5分别采用木糖醇、卡拉胶和3-羟基-2-乙基-4-吡喃酮中的任意两种复配,避光常温密封贮存20个月后酯类化合物含量维持在较高水平,三者协同增效,效果更为明显。
Claims (8)
1.一种补气健脾保健白酒,其特征在于,包括下述重量份原料组成:白酒400-800份,炙甘草20-40份,茯苓20-40份,人参20-40份,生姜20-40份。
2.如权利要求1所述的补气健脾保健白酒,其特征在于:所述补气健脾保健白酒的酒度为25-38度。
3.如权利要求1所述的补气健脾保健白酒,其特征在于:所述补气健脾保健白酒的为清香型或浓香型白酒。
4.如权利要求1-3中任一项所述的补气健脾保健白酒,其特征在于:还包括1-9重量份的添加剂。
5.如权利要求4所述的补气健脾保健白酒,其特征在于:所述添加剂,包括下述重量份的组分:3-羟基-2-乙基-4-吡喃酮10-30份,木糖醇20-40份,卡拉胶10-20份。
6.权利要求1-3中任一项所述的补气健脾保健白酒的制备方法,其特征在于,包括下述步骤:
(1)按配比称取各原料,将人参,炙甘草,茯苓和生姜放入白酒中浸泡;
(2)用酒用活性炭进行吸附,过滤。
7.如权利要求6所述的制备方法,其特征在于:步骤(1)所述浸泡时间为15-30天。
8.权利要求4-5中任一项所述的补气健脾保健白酒的制备方法,其特征在于,包括下述步骤:
(1)按配比称取各原料,将人参,炙甘草,茯苓和生姜放入白酒中浸泡;
(2)用酒用活性炭进行吸附,过滤;
(3)加入添加剂。
