本发明涉及一种抗酒精性肝损伤的护肝白酒及其制备方法,所述抗酒精性肝损伤的护肝白酒包括下述重量份原料组成:白酒400-800份,葛根20-40份,山楂20-40份,木瓜20-40份,枸杞子20-40份。本发明所述的抗酒精性肝损伤的护肝白酒,能最大限度地发挥各种药材的综合作用,酒体柔和,绵甜爽口,诸香谐调,口味爽净,具有抗酒精性肝损伤的作用,对减小肝损伤的效果显著,尤其是使用了添加剂之后,解决了白酒稳定性差的问题。

背景技术
白酒是以粮谷为主要原料,以大曲、小曲或麸曲及酒母等为糖化发酵剂,经蒸煮、糖化、发酵、蒸馏而制成的蒸馏酒。又称烧酒、老白干、烧刀子等。酒质无色(或微黄)透明,气味芳香纯正,入口绵甜爽净,酒精含量较高,经贮存老熟后,具有以酯类为主体的复合香味。
白酒又名烧酒、白干,是中国的传统饮料酒,很受中国人欢迎。据《本草纲目》记载:“烧酒非古法也,自元时创始,其法用浓酒和糟入甑(指蒸锅),蒸令气上,用器承滴露。”由此可以得出,我国白酒的生产已有很长的历史。
白酒是中国特有的一种蒸馏酒。白酒的酒度一般在41度以上,多在55度以上,一般不超过65度。低度数白酒是指采用了降度工艺,酒度一般在38度,甚至达到20多度的白酒,简称低度酒。酒的降度一般是采用在母酒中加入高纯度的蒸馏水来实现的。
所谓“酒越陈越香”,多是指38度以上的白酒。这些白酒只需要注明生产日期,不需要注明保质期。但是对于低度数白酒来说,却并非“越陈越香”。研究发现,白酒中的总酸在货架期存放过程中都是上升的,30°酒上升的幅度大一些,平均每年上升20%~28%,38°酒平均每年上升13%~22%。在储存过程中,酸增加的主要原因是:a、白酒在存放过程中出现水解现象,酯水解后生成相应的酸和乙醇。b、酸的挥发系数小,在贮存过程中不易挥发。而白酒中的总酯在货架期存放过程中都是下降的,30°酒下降的幅度大一些,平均每年下降7%~13%,38°酒平均每年下降5%~9%。对于低度酒而言,由于CH3CH2OH浓度较低,H2O浓度较高,正向水解的速度较快,因而水解是造成总酯在货架期存放过程中下降的主要原因。
保健白酒或药酒,一般是以白酒为基酒,但为了具备保健功效而加入了一些药食两用的中药成分,为了保证中药成分的药效,以及方便特定人群的引用,市场上的具有保健功效的药酒,通常都是35度或者度数更低的低度数白酒。因此,保健白酒普遍具有低度数白酒的稳定性较差,存放期间,酸量升高、酯量下降等缺点。
发明内容
本发明所要解决的技术问题之一是提供一种抗酒精性肝损伤的护肝白酒。
本发明所要解决的技术问题之二是提供上述抗酒精性肝损伤的护肝白酒的制备方法。
解决该技术问题的方案是:
一种抗酒精性肝损伤的护肝白酒,包括下述重量份原料组成:白酒400-800份,葛根20-40份,山楂20-40份,木瓜20-40份,枸杞子20-40份。
优选的,
所述白酒为酒度25-38度的白酒。
所述白酒的为清香型或浓香型白酒。
所述的抗酒精性肝损伤的护肝白酒还可以包括1-9重量份的添加剂。
进一步优选的,所述添加剂,包括下述重量份的组分:3-羟基-2-乙基-4-吡喃酮10-30份,木糖醇20-40份,卡拉胶10-20份。
本发明还提供了所述抗酒精性肝损伤的护肝白酒的制备方法,其包括下述步骤:
(1)按配比称取各原料,将木瓜,葛根,山楂和枸杞子放入白酒中浸泡;
(2)用酒用活性炭进行吸附,过滤。
优选的,
步骤(1)所述浸泡时间为15-30天。
浸泡条件为常温(25±5℃)密封条件下浸泡。
在步骤(2)之后,可以按配比加入添加剂,制得优选的含有添加剂的抗酒精性肝损伤的护肝白酒。
本发明中,
木瓜,中药名。为蔷薇科植物贴梗海棠的干燥近成熟果实。夏、秋二季果实绿黄时采收,置沸水中烫至外皮灰白色,对半纵剖,晒干。功能:有舒筋活络,和胃化湿的功效。《本草纲目》:木瓜所主霍乱吐利转筋、脚气,皆脾胃病,非肝病也。肝虽主筋,而转筋则由湿热、寒湿之邪袭伤脾胃所致,故筋转必起于足腓,腓及宗筋皆属阳明。木瓜治转筋,非益筋也,理脾而伐肝也,土病则金衰而木盛,故用酸温以收脾胃之耗散,而借其走筋以平肝邪,乃土中泻木以助金也。木平则土得令而金受荫矣。《素问》云:酸走筋,筋病无多食酸。孟诜云:多食木瓜损齿及骨。皆伐肝之明验,而木瓜入手、足太阴,为脾胃药,非肝药,益可征矣。
葛根,中药名。为豆科植物野葛的干燥根,习称野葛。秋、冬二季采挖,趁鲜切成厚片或小块;干燥。甘、辛,凉。有解肌退热,透疹,生津止渴,升阳止泻之功。常用于表证发热,项背强痛,麻疹不透,热病口渴,阴虚消渴,热泻热痢,脾虚泄泻。《本草汇言》:“葛根,清风寒,净表邪,解肌热,止烦渴。泻胃火之药也。尝观发表散邪之药,其品亦多,如麻黄拔太阳营分之寒,桂枝解太阳卫分之风,防风、紫苏散太阳在表之风寒,藁本、羌活散太阳在表之寒湿,均称发散药也,而葛根之发散,亦入太阳,亦散风寒,又不同矣,非若麻、桂、苏、防,辛香温燥,发散而又有损中气之误也;非若藁本、羌活,发散而又有耗营血之虞也。”
山楂,中药名。为蔷薇科植物山里红或山楂的干燥成熟果实。秋季果实成熟时采收,切片,干燥。《医学衷中参西录》:山楂,若以甘药佐之,化瘀血而不伤新血,开郁气而不伤正气,其性尤和平也。
枸杞子既是传统名贵中药材,又是一种营养滋补品。在卫生部公布的63种药食两用的名单中,名列榜首。作为传统中药,枸杞子性平味甘,具有滋补肝肾、益精明目、润肺的功效。通过化学成分分析,枸杞子的果实检测出含有丰富的天然胡萝卜素、维生素C、枸杞子蛋白多糖、甜菜碱、亚油酸以及铁、磷、钙等营养成分,有补虚安神、明目祛风、滋肾润肺以及护肝抗肿瘤等作用。枸杞子含有丰富的胡萝卜素、多种维生素和钙、铁等健康眼睛的必需营养物质,故有明目之功,俗称“明眼子”。历代医家治疗肝血不足、肾阴亏虚引起的视物昏化和夜盲症,常常使用枸杞子。并且,枸杞子从诗经“集于苞杞”时起,便用于医药,迄今已有3000余年的历史,自古就有晋朝葛洪单用枸杞子捣汁滴目,治疗眼科疾患的故事。枸杞子之名始见于《神农本草经》,并列为上品,千百年来深受人们的喜爱。
3-羟基-2-乙基-4-吡喃酮,CAS号:4940-11-8。我国GB2760-86规定为允许使用的食和香料,是一种香味增效剂,是一种安全无毒,具有增香、增甜、保香和掩盖异味等作用的食品添加剂。
木糖醇,CAS号:87-99-0。
卡拉胶,CAS号:11114-20-8。卡拉胶是一种从海洋红藻(主要是各种麒麟菜)中提取出的多糖,其化学结构为D-半乳糖和3,6-脱水-D-半乳糖残基所组成的线性多糖化合物,残基上带有酯式硫酸盐基团。
本发明所述的抗酒精性肝损伤的护肝白酒,能最大限度地发挥各种药材的综合作用,酒体柔和,绵甜爽口,诸香谐调,口味爽净,具有抗酒精性肝损伤的作用,对减小肝损伤的效果显著,尤其是使用了添加剂之后,解决了低度数白酒稳定性差的问题。现有技术中,白酒通常是不加入添加剂的,但是由于药酒或保健白酒度数较低,随着时间会发生部分酸化,酸值上升,酯量下降,添加剂中的木糖醇可以与酸发生反应,与其反应生成具有芳香味的酯,卡拉胶作为一种分散剂,对抗酒精性肝损伤的护肝白酒起到了稳定的作用,3-羟基-2-乙基-4-吡喃酮可以除去保健白酒中的中药材的异味。意外地,研究发现:当同时使用3-羟基-2-乙基-4-吡喃酮、木糖醇和卡拉胶时,对于减缓保健白酒中酯量的下降起到了协同增效的作用。本发明所述的抗酒精性肝损伤的护肝白酒制备方法简单,易保藏。
具体实施方式
下面结合实施例对本发明作进一步描述。
实施例1
取35度白酒600公斤,放入木瓜30公斤,葛根30公斤,山楂30公斤,枸杞子30公斤,密封,常温浸泡30天,用酒用活性炭SB-204去除异味及浑浊,过滤,得到实施例1的抗酒精性肝损伤的护肝白酒。
经急性毒性实验结果表明,急性毒性极低,安全性高;药效学实验结果表明,具有抗酒精性肝损伤的作用,从病理切片和抗氧化指标分析,对减小肝损伤的效果显著。
本发明所述的抗酒精性肝损伤的护肝白酒,能最大限度地发挥各种药材的综合作用,酒体柔和,绵甜爽口,诸香谐调,口味爽净,具有抗酒精性肝损伤的作用,对减小肝损伤的效果显著。
实施例2-5
按照表2中实施例2-5的添加剂配方称取各原料,混合均匀,制得添加剂。称取3克添加剂加入到720克实施例1制得的抗酒精性肝损伤的护肝白酒中,搅拌混合均匀,制成实施例2-5的抗酒精性肝损伤的护肝白酒。

检测避光常温密封贮存20个月后,实施例1-5的保健白酒中主要酯类化合物的含量,测试结果见表2。

由实验结果可见,贮存20个月后,实施例1-5的抗酒精性肝损伤的护肝白酒中几种主要酯类化合物含量维持在了较高水平,保持了良好的芳香味和口感,尤其是实施例2-4使用了添加剂之后,酯类含量更高。
更尤其是,实施例2使用了木糖醇、卡拉胶、3-羟基-2-乙基-4-吡喃酮三者复配,较实施例3-5分别采用木糖醇、卡拉胶和3-羟基-2-乙基-4-吡喃酮中的任意两种复配,避光常温密封贮存20个月后酯类化合物含量维持在较高水平,三者协同增效,效果更为明显。
Claims (8)
1.一种抗酒精性肝损伤的护肝白酒,其特征在于,包括下述重量份原料组成:白酒400-800份,葛根20-40份,山楂20-40份,木瓜20-40份,枸杞子20-40份。
2.如权利要求1所述的抗酒精性肝损伤的护肝白酒,其特征在于:所述抗酒精性肝损伤的护肝白酒的酒度为25-38度。
3.如权利要求1所述的抗酒精性肝损伤的护肝白酒,其特征在于:所述抗酒精性肝损伤的护肝白酒的为清香型或浓香型白酒。
4.如权利要求1-3中任一项所述的抗酒精性肝损伤的护肝白酒,其特征在于:还包括1-9重量份的添加剂。
5.如权利要求4所述的抗酒精性肝损伤的护肝白酒,其特征在于:所述添加剂,包括下述重量份的组分:3-羟基-2-乙基-4-吡喃酮10-30份,木糖醇20-40份,卡拉胶10-20份。
6.权利要求1-3中任一项所述的抗酒精性肝损伤的护肝白酒的制备方法,其特征在于,包括下述步骤:
(1)按配比称取各原料,将木瓜,葛根,山楂和枸杞子放入白酒中浸泡;
(2)用酒用活性炭进行吸附,过滤。
7.如权利要求6所述的制备方法,其特征在于:步骤(1)所述浸泡时间为15-30天。
8.权利要求4-5中任一项所述的抗酒精性肝损伤的护肝白酒的制备方法,其特征在于,包括下述步骤:
(1)按配比称取各原料,将木瓜,葛根,山楂和枸杞子放入白酒中浸泡;
(2)用酒用活性炭进行吸附,过滤;
(3)加入添加剂。
