奶茶具有营养丰富,口感爽滑,品种多变,香味浓郁等特点,是一种一年四季都可饮用的饮料,但目前市场上的奶茶品种一般以纯全脂牛奶添加各种水果为主,口味普遍偏甜,同时加入了大量的白砂糖做为甜味剂,具有含量糖高、热量高、脂肪含量高、口味单一和保健功效少等缺陷,不适合肥胖人士和糖尿病患者日常饮用。
随着社会上人们的生活水平不断提高,对日常饮食的健康需求也越来越重视,现有奶茶的品种和保健功能已不能满足不同市场和人群的需求。
发明内容
为了弥补现有技术的缺陷,本发明提供一种具有含糖量少、热量低、脂肪含量少、口感风味特殊和具有多种保健功效的山黄皮果奶茶及其制备方法。
本发明的技术方案是:
一种山黄皮果奶茶,由以下按重量份配比的原料组合制成:山黄皮果粉10-30份,绿茶粉15-40份、水牛奶奶粉60-100份、柠檬酸1-5份、食盐0.3-0.5份和木糖醇10-30份;山黄皮果奶茶的制备方法包括以下步骤:将山黄皮果粉、绿茶粉、食盐和木糖醇进行调配,加水煮沸,加入柠檬酸,继续煮沸1-3分钟,然后加入用温水溶解的水牛奶奶粉料液,搅拌均匀,煮沸1-2分钟,过滤,得到山黄皮果奶茶。
以上所述的制备方法包括山黄皮果粉的制备方法。
以上所述的山黄皮果粉的制备方法为:挑选山黄皮果、清洗、熬煮、过滤、静置、提取上清液、喷雾干燥和辐照杀菌,得到山黄皮果粉。
以上所述的温水的温度为35-60℃。
以上所述的过滤为采用300-500目的三层纱布滤网。
以上所述的山黄皮果,山黄皮果俗称"鸡皮果",拉丁名:Clausena indica(Dalz.)Oliv。属芸香科植物,果实、树叶均具有特殊香味,主要分布在广西西南边陲少数民族聚居的石山地区。山黄皮果含有左旋肉碱及18种氨基酸,总含量为99.21mg/100g,蛋白质1.39%,总糖量为9.3%,维生素C74 mg/100g,总固形物17.5/%,总酸度为2.28%,可食率75%,还有人体需要的多种矿物营养。左旋肉碱又称为肉毒碱、维生素BT,是人体细胞内天然存在的一种化合物,它的主要作用是燃烧脂肪。山黄果实入口酸甜,具有特殊香味,经熬煮提取处理后所得的山黄皮果干粉香味更为浓郁。药性:味辛、苦;性温,具有消暑、消炎、化滞、祛湿、疏风清热、利湿解毒、截疟、健脾健胃、降血糖、降血脂、降血压、减肥的功效。
以上所述的绿茶粉,绿茶粉是把绿茶采用瞬间粉碎法,粉碎成600目以上的绿茶粉末,最大限度地保持茶叶原有的天然绿色以及营养、药理成分,具有良好的抗氧化和镇静作用,可减轻疲劳,含有维生素C及类黄酮,其中的类黄酮能增强维他命C的抗氧化功效,绿茶中的芳香族化合物能溶解脂肪、化浊去腻、防止脂肪积滞体内,维生素B1、C能促进胃液分泌,有助消化与消脂,还可以增加体液营养和热量的新陈代谢,强化微血管循环,降低脂肪的沉积。
以上所述的水牛奶,是由水牛产出的奶,水牛奶是地方特色产品,在中国,只有广东、江西、广西等五个省份有水牛,广西是中国目前最大的水牛奶产量地区,水牛奶营养价值高,其干物质含量高达18.4%,比普通黑白花牛高近50%;乳脂率含量为7.9%,而普通牛奶一般是3%-3.5%,水牛奶中所含蛋白质、氨基酸,乳脂、维生素、微量元素等均高于黑白花牛奶,据国家有关科研部门测定,水牛奶质十分优良,可称得上是奶中极品,其价值相当于黑白花牛奶的二倍,最适宜儿童生长发育和抗衰老的锌、铁、钙含量特别高,氨基酸、维生素含量非常丰富,是老幼皆宜的营养食品,据专家研究,水牛奶的干物质含量是18.9%,分别比黑白花牛奶及人乳高19%和27%;蛋白质和脂肪含量分别是黑白花牛奶和人乳的1.5倍到3倍,水牛奶乳化特性好,100kg的水牛奶可生产25kg奶酪,而相同量的黑白花牛奶只能生产12.5kg奶酪,此外,水牛奶矿物质含量和维生素含量也都优于黑白花奶牛和人乳,铁和维生素A的含量分别是黑白花牛奶的约80倍和40倍,并被认为是最好的补钙、补磷食品之一,水牛奶乳汁香醇浓厚,无膻味,直接饮用香浓可口,水牛奶的胆固醇低,维生素、微量元素丰富,尤其是酪蛋白含量高,能进行高质量乳制品的深加工,作为商业上极有价值的成分,水牛奶的脂肪、蛋白质、乳糖的含量是黑白花牛奶的数倍,矿物质和维生素含量也是黑白花牛奶和人乳的数十倍,水牛奶除了普通牛奶所含的营养物质之外还含有许多功能物质,例如酪蛋白磷酸肽,可防止人体内磷酸钙结晶的形成或不溶性磷酸钙沉淀的生成,并促进肠绒膜对钙、铁、硒等矿物质的吸收,类吗啡活性肽具有镇痛、调节人体情绪、呼吸、脉搏、体温、消化系统及内分泌等功能,抗高血压肽和抗血栓肽可抑制血管紧张素的产生,对血压进行调节,起到抗高血压的作用,免疫调节肽可以预防和治疗肠道微生物的干扰,近年研究出在抗衰老、抗过敏和抗炎症方面也有显著疗效,水牛奶是一种营养丰富、全面,消化吸收率高的一种优质奶,因此水牛奶被认为是世界上最具竞争力的乳产品之一,目前,世界上水牛奶系列产品的开发主要定位于高附加值的奶制品,如奶酪等,同时也被开发成市场容量大、高质量的灭菌乳、酸乳等纯乳产品或含乳饮料作为一类高级营养食品,水牛奶制品日渐成人们消费的“新宠”。
以上所述的木糖醇,又名戊五醇,原产于芬兰,是从白桦树、橡树、玉米芯、甘蔗渣等植物中提取出来的一种天然植物甜味剂。其常温下甜度与蔗糖相当,低温下甜度达到蔗糖的1.2倍,与蔗糖相比,具有热量低的优势,因而被应用于各种减肥食品中作为高热量白糖的代用品,同时能为人体提供能量,合成糖元,减少脂肪和肝组织中的蛋白质消耗,使肝脏受到保护和修复,减少人体内有害酮体的产生,不会因食用而为发胖忧虑。木糖醇在体内新陈代谢不需要胰岛素参与,使血糖值不升高,可消除糖尿病人三多(多饮、多尿、多食),因此是糖尿病人安全的甜味剂、营养补充剂和辅助治疗剂,同时木糖醇能促进肝糖元合成,服用后血糖不会上升,对肝病患者有改善肝功能和抗脂肪肝的作用,治疗乙型迁延性肝炎,乙型慢性肝炎及肝硬化有明显疗效,是肝炎并发症病人的理想辅助药物。经现代科学研究证明,木糖醇具有甜味剂、减肥、防龋齿和改善肝功能的功效。
本发明突出的实质性特点和显著的进步是:
(1)含有山黄皮果成分,具有消暑、消炎、化滞、祛湿、疏风清热、利湿解毒、截疟、健脾健胃、降血糖、降血脂、降血压和减肥等多种保健功效,且具有风味特殊,口感酸甜等特点。
(2)本发明使用木糖醇替代了白砂糖做为甜味剂,减少了身体对糖份和热量的摄取,且具有口感清爽不甜腻的特点。
(3)本发明使用了水牛奶替代了奶茶传统添加使用的全脂牛奶,具有比传统全脂牛奶更高更全面的营养价值,奶香更浓郁,更适合广大人士的饮用。
具体实施方式
实施例1
本发明的山黄皮果奶茶,由以下按重量份配比的原料组合制成:山黄皮果粉10份,绿茶粉15份、水牛奶奶粉70份、柠檬酸1份、食盐0.31份和木糖醇10份,其具体制备过程如下:
1)制备山黄皮果粉:
挑选山黄皮果→清洗→熬煮→过滤→静置→提取上清液→喷雾干燥→辐照杀菌→得到山黄皮果粉。
2)将山黄皮果粉、绿茶粉、食盐和木糖醇混合均匀,过筛,加入适量水,煮沸;
3)加入柠檬酸,继续煮沸1分钟,得到料液A;
4)水牛奶奶粉用40℃温水进行溶解,加入步骤3)所得的料液A中,搅拌均匀,继续煮沸1分钟,得到料液B;
5)将料液B使用300目的纱布滤网进行过滤,得到山黄皮果奶茶。
实施例2
本发明的山黄皮果奶茶,由以下按重量份配比的原料组合制成:山黄皮果粉20份,绿茶粉30份、水牛奶奶粉80份、柠檬酸2份、食盐0.4份和木糖醇20份,其具体制备过程如下:
11)制备山黄皮果粉:
挑选山黄皮果→清洗→熬煮→过滤→静置→提取上清液→喷雾干燥→辐照杀菌→得到山黄皮果粉。
2)将山黄皮果粉、绿茶粉、食盐和木糖醇混合均匀,过筛,加入适量水,煮沸;
3)加入柠檬酸,继续煮沸2分钟,得到料液A;
4)水牛奶奶粉用50℃温水进行溶解,加入步骤3)所得的料液A中,搅拌均匀,继续煮沸1.5分钟,得到料液B;
5)将料液B使用400目的纱布滤网进行过滤,得到山黄皮果奶茶。
实施例3
本发明的山黄皮果奶茶,由以下按重量份配比的原料组合制成:山黄皮果粉30份,绿茶粉40份、水牛奶奶粉100份、柠檬酸3份、食盐0.5份和木糖醇30份,其具体制备过程如下:
1)制备山黄皮果粉:
挑选山黄皮果→清洗→熬煮→过滤→静置→提取上清液→喷雾干燥→辐照杀菌→得到山黄皮果粉。
2)将山黄皮果粉、绿茶粉、食盐和木糖醇混合均匀,过筛,加入适量水,煮沸;
3)加入柠檬酸,继续煮沸3分钟,得到料液A;
4)水牛奶奶粉用60℃温水进行溶解,加入步骤3)所得的料液A中,搅拌均匀,继续煮沸2分钟,得到料液B;
5)将料液B使用500目的纱布滤网进行过滤,得到山黄皮果奶茶。

1.一种山黄皮果奶茶,其特征在于:由以下按重量份配比的原料组合制成:山黄皮果粉10-30份,绿茶粉15-40份、水牛奶奶粉60-100份、柠檬酸1-5份、食盐0.3-0.5份和木糖醇10-30份;山黄皮果奶茶的制备方法包括以下步骤:将山黄皮果粉、绿茶粉、食盐和木糖醇进行调配,加水煮沸,加入柠檬酸,继续煮沸1-3分钟,然后加入用温水溶解的水牛奶奶粉料液,搅拌均匀,煮沸1-2分钟,过滤,得到山黄皮果奶茶。

3.根据权利要求2所述的山黄皮果奶茶及其制备方法,起特征在于:所述的山黄皮果粉的制备方法为:挑选山黄皮果、清洗、熬煮、过滤、静置、提取上清液、喷雾干燥和辐照杀菌,得到山黄皮果粉。
4.根据权利要求1所述的山黄皮果奶茶及其制备方法,其特征在于:所述的温水的温度为35-60℃。
5.根据权利要求1所述的山黄皮果奶茶,其特征在于:所述的过滤为采用300-500目的三层纱布滤网。
