Abstract
本发明公开一种芒果味黑豆豆奶配方,以黑豆和牛奶为主原料,配以芒果和金银花作为辅助原料,经制备黑豆浆、芒果泥、金银花粉、混合、杀菌等工艺制作而成。因本发明采用了具有高蛋白的黑豆;配以清热解毒的金银花和富含维生素A、胡萝卜素的芒果,制作出的豆奶具有清热解毒的功效,入口质感细腻清晰,奶味醇厚,芒果味香浓。

技术领域:
本发明涉及一种豆奶的制作,具体是一种以黑豆和牛奶为主原料,配以芒果和金银花作为辅助原料制作的一种芒果味黑豆豆奶配方。
背景技术:
黑豆别名乌豆、枝仔豆、黑大豆。黑豆是大豆的一种,蛋白质、脂肪、碳水化合物以及胡萝卜素、维生素b1、b2烟酸等营养物质非常丰富。研究表明,黑豆具有高蛋白、低热量的特性。其中蛋白质的含量高达36%~40%,是肉类的2倍、鸡蛋的3倍、牛奶的12倍;氨基酸多达18种,其中有8种氨基酸是人体所必需的;还有油酸19种,其中80%是不饱和脂肪酸,95%以上都能被吸收,不仅能够满足人体对脂肪的需要,还能够降低血液中胆固醇的作用。此外,黑豆还含有丰富的微量元素,如锌、铜、镁、钼、硒、氟等,这些微量元素都能够延缓人体衰老、降低血液黏稠度。黑豆还含有4%的粗纤维,经常食用可以促进消化,防止便秘。
芒果,果实含有糖、蛋白质、粗纤维,芒果所含有的维生素A的前体胡萝卜素成分特别高,是所有水果中少见的。
金银花,又名忍冬,为忍冬科多年生半常绿缠绕木质藤本植物。金银花自古被誉为清热解毒的良药。它性甘寒气芳香,甘寒清热而不伤胃,芳香透达又可祛邪。金银花既能宣散风热,还善清解血毒,用于各种热性病,如身热、发疹、发斑、热毒疮痈、咽喉肿痛等证,均效果显著。
随着人们生活水平的提高和对健康消费观念的不断加强,具有保健功能的食品越来越受人们的亲睐。其中黑豆的因其蛋白质含量高,配以芒果、金银花、牛奶制作的营养保健豆奶,还未见报道。
发明内容:
本发明目的是提供一种以黑豆和牛奶为主原料,配以芒果和金银花作为辅助原料制作的保健豆奶,填补这一领域的空白。
本发明是这样实现的:一种芒果味黑豆豆奶配方,其特征在于:以黑豆和牛奶为主原料,配以芒果和金银花作为辅助原料,采用以下步骤制作:
(1)黑豆浆制备:精选颗粒完整、饱满的黑豆洗净,用0.1%氢氧化钠水溶液浸泡至无硬心后,再用清水将黑豆洗净,放入磨浆设备中,加水,料液比为1:5~1:10(m:v),磨浆,通过200~300目的过滤机加压过滤,得黑豆浆;
(2)芒果泥的制备:取新鲜芒果去皮去壳,洗净,放入打浆机中打浆,制得芒果泥;
(3)金银花粉的制备:取干燥的金银花,洗净,放入烘干设备中烘干,冷却后用粉碎设备粉碎,过目100目筛,制得金银花粉;
(4)配料混合:黑豆浆、芒果泥、金银花粉在加入其他原料按一定重量份配比混合,投入均质机中均质;
(5)杀菌:将均质后的混合料经超高温瞬时杀菌,杀菌温度为137~142℃,保温2~3min后,降温至15~25℃,即得成品。
上述步骤(4)中黑豆浆60~80重量份、芒果泥25~30重量份、金银花粉5~10重量份,其他原料:鲜牛乳50~80份、白糖5~10重量份。
本发明因采用了具有高蛋白的黑豆;配以清热解毒的金银花和富含维生素A、胡萝卜素的芒果,制作出的豆奶具有清热解毒的功效,入口质感细腻清晰,奶味醇厚,芒果味香浓。
具体实施方式:
实施例:以10公斤黑豆为例,对本发明进行详细的说明:
1、制备黑豆浆:精选颗粒完整、饱满的黑豆洗净,用0.1%氢氧化钠水溶液浸泡至无硬心后,再用清水将黑豆洗净,放入磨浆设备中,加水,料液比为1:10(m:v),磨浆,通过200~300目的过滤机加压过滤,得黑豆浆。
2、制备芒果泥:取新鲜芒果去皮去壳,洗净,放入打浆机中打浆,制得芒果泥。
3、制备金银花粉:取干燥的金银花,洗净,放入烘干设备中烘干,冷却后用粉碎设备粉碎,过目100目筛,制得金银花粉。
4、配料混合:取黑豆浆30公斤、芒果泥7.5公斤、金银花粉2.5公斤,鲜牛乳40公斤、白糖5公斤,投入均质机中均质。
5、杀菌:将均质后的混合料经超高温瞬时杀菌,杀菌温度为137℃,保温2min后,降温至15℃,即得成品。
以上所述仅为本发明的较佳实施例,凡依本发明权利要求范围所做的均等变化,皆应属本发明权利要求的涵盖范围。

1.一种芒果味黑豆豆奶配方,其特征在于:以黑豆和牛奶为主原料,配以芒果和金银花作为辅助原料,采用以下步骤制作:
(1)黑豆浆制备:精选颗粒完整、饱满的黑豆洗净,用0.1%氢氧化钠水溶液浸泡至无硬心后,再用清水将黑豆洗净,放入磨浆设备中,加水,料液比为1:5~1:10(m:v),磨浆,通过200~300目的过滤机加压过滤,得黑豆浆;
(2)芒果泥的制备:取新鲜芒果去皮去壳,洗净,放入打浆机中打浆,制得芒果泥;
(3)金银花粉的制备:取干燥的金银花,洗净,放入烘干设备中烘干,冷却后用粉碎设备粉碎,过目100目筛,制得金银花粉;
(4)配料混合:黑豆浆、芒果泥、金银花粉在加入其他原料按一定重量份配比混合,投入均质机中均质;
(5)杀菌:将均质后的混合料经超高温瞬时杀菌,杀菌温度为137~142℃,保温2~3min后,降温至15~25℃,即得成品。
2.根据权利要求1所述的一种黑豆奶配方,其特征在于:步骤(4)中黑豆浆60~80重量份、芒果泥25~30重量份、金银花粉5~10重份,其他原料:鲜牛乳50~80份、白糖5~10重量份。
