发明内容

ii/气体传输薄膜,可以取自卷筒或预先裁剪好的薄膜,也可以是由塑料框架围绕的薄膜,真空压制在盖板和储物器的逆向上缘处;也可以换用对氧气和二氧化碳传输具有高阻碍性的薄膜,通过塑料框架上的透气橡胶/塑料衬垫实现最佳的气体传输。采用后者时,可以采用聚酰胺制的薄膜以强化水蒸气的传输性能。
盖板上有两到四个逆向插孔,经转动后可以将盖子和薄膜压在容器体边缘形成密封状态;
3.容器体可由一系列的塑料材料制成,包括但不仅限于以下材料:聚酰胺(尼龙6,66,11,或12,及其混合物)、聚碳酸酯、聚乙烯、聚对苯二甲酸乙二醇酯、聚丙烯、聚苯乙烯、聚氯乙烯,及其混合物;

具体实施例方式
[0023]在以下所有的描述中会给出特定的细节,以便更彻底地了解本发明。但是,本发明应用过程中,可以没有这些特定的细节。在其他例子中,公知的原理没有具体地显示或描述出来以免对本发明造成不必要的岐义。相应的,说明书仅仅是阐释性的,而不是限制性的。
[0024]本发明提供了新颖的包装方式,包括对水果和蔬菜进行水洗、清洁、削皮、去籽、以及切块的预处理,然后进行气调包装,使之随后成为即食产品。新鲜产品在密封的储物器内还会继续呼吸作用,消耗氧气,并向气室环境释放二氧化碳,且受制于气调包装(MAP)。这一自然过程会使氧气含量降低,二氧化碳含量升高。这一状态会限制产品的呼吸作用,抑制微生物生长和孢子萌发,延缓老化,促进乙烯作用,从而维持产品的成熟度并抑制其腐败。
[0025]图1和2中显示的是实用的、可反复使用的气调储物器、盖子和薄膜。该装置可以同时或独立地调节密封包装内外部以及环境大气之间的氧气、二氧化碳和水蒸气的传输。氧气和二氧化碳的传输是由一系列专用薄膜进行调节的,这些薄膜具有特定的氧气和二氧化碳渗透率,和/或利用盖子上、储物器密封衬垫上的微穿孔,或者薄膜本身的微穿孔。一般来说,如果使用微穿孔,总的表面积将达到50到200微米的范围,并且可以根据具体的产品类别进行定制。盖子上使用穿孔,无论是微穿孔或是宏穿孔,其总的穿孔表面积达到盖子表面积的1%。
[0026]根据本发明,将已经处理的适度成熟的水果和蔬菜放置在容器内,用塑料包装(MAP包装)密封,并有适当的气体传输率,确保在5℃下储存7天后容器内顶部空间达到高二氧化碳水平(5%到20%)和低氧气水平(1.5%到5%)。特殊食品或储量可采用薄膜,以确保氧气含量不会降至1%以下,否则无氧呼吸将影响食物品质,而且食品安全也会成问题。
[0027]特殊种类的水果和蔬菜至少有三种薄膜或穿孔供选择。每个可选薄膜都有颜色代码以便识别。具体来说,质量(克)和总包装体积(cm3)之间的比例为0.3到0.6之间的薄膜氧气流通范围可应用如下:
1.类别1
高阻碍性薄膜
氧气穿透率为:1标准大气压,25℃下,每24小时100到1500cm3/m2
二氧化碳穿透率为:1标准大气压,25℃下,每24小时300到4500cm3/m2
2.类别2
中阻碍性薄膜
氧气穿透率为:1标准大气压,25℃下,每24小时1500到5000cm3/m2
二氧化碳穿透率为:1标准大气压,25℃下,每24小时4500到15,000cm3/m2
4.类别3
低阻碍性(高渗透性)薄膜
氧气穿透率为:1标准大气压,25℃下,每24小时25,000+cm3/m2以上
二氧化碳穿透率为:1标准大气压,25℃下,每24小时75,000+cm3/m2以上
实样应用:蘑菇,芦笋。
[0028]本新颖装置通过选取盖子、储物器和薄膜材料,调节密封包装内相对湿度,为产品质量提供了额外的保护。薄膜,储物器和/或盖子的成分选自一系列聚酰胺材料(75%到100%的相对湿度下,水蒸气吸收/渗透指数为每天1.0到2.5g-mm/m2),使本产品能够吸收湿气,调节密封包装内相对湿度水平。相对湿度差动越高,能达到的储物器内部相对湿度就越低。维持内部相对湿度大致在75%RH到85%RH之间,就能除去残留在产品表面的水分,轻微降低产品湿度,将呼吸作用产生的水蒸气除去,保持相对湿度水平,使在该状态下(80%RH以下),微生物生长和孢子萌发受抑制,从而维持食物品质。经水洗,烘干至其原重量的-1%(重量/重量)后再行储藏的产品表面如果没有水分残留,预先备妥的色拉显示其保存期限延长了一倍。
实施例1:
[0029]利用本发明处理和保存容易腐烂的奇异果,包括以下步骤:
1.选取可即食且没有明显的腐烂现象的坚实成熟奇异果(坚实度1到3kgf),用肥皂和清水(或100ppm的氯)洗净然后用纸巾擦干或风干;
2.用刀将奇异果去皮,再根据需要切成两半、切段或切片。
3.将约200克经处理的奇异果(约须两个去皮的奇异果)放入一个500ml的储物器内,容器体和盖子的成分为聚对苯二甲酸乙二醇酯;
4.将奇异果用塑料膜密封在包装内(硅质衬垫),该塑料膜的氧气穿透率为1标准大气压25℃下每24小时3000cm3/m2。在5℃下保存15天(气调包装)。
[0030]储藏三天后,气调包装下奇异果的质量跟非气调包装控制的(将同样的水果放入穿孔泡壳中)相比优势明显。非气调控制下的水果出现以下明显症状:积水,外观半透明,果核附近呈深灰色,果肉质地变软并已没有奇异果特别的味道了。放置在泡壳中的奇异果经3名经专门训练的品评员评定,经三天保存后已经不宜食用了。
[0031]保存在气调包装储物器内的奇异果经品评员评定,第7天时其品质依然良好,第15天时仍可食用。果肉切片为亮绿色,质地为不透明,跟储藏前的质地一样。保存15天后奇异果果香还在,且无明显的异味。
实施例2:
[0032]使用本发明处理和保存易碎的嫩散叶莴苣色拉,包括以下步骤:
1.嫩散叶莴苣混合物由红色莴苣、绿色橡木、红色橡木、绿色树叶、红卷须生菜、红色树叶、菊苣、莴苣、百合和绿色莴苣组成,经前期处理后包装在气调包装袋内,在1标准大气压25℃下每24小时的氧气穿透率为1800cm3/m2;
2.包装后的保质期为六天,再根据编码日期保存六天(对5℃下12天的保质期编号),打开袋子,取100克嫩莴苣放入500ml的通风泡壳(环境大气)或本发明容器中重新包装,本发明容器由储物器,盖子和薄膜组成,成分为聚酰胺混合物。
3.在薄膜上造成60微米的穿孔使氧气和二氧化碳穿透率达到约1标准大气压25℃下每24小时2500cm3/m2,然后用硅质衬垫将包装密封,5℃的温度下保存3,6,9和12天;
[0033]保存于通风泡壳的嫩叶产品三天后表面严重萎蔫,同时部分成分发生褐变,最明显的是菊苣和其他红色成分。第六天产品仍可勉强接受,但是在保存的第六天已经不能食用。在第六天,该产品60%的叶面因泡壳中高含量的氧气出现或萎蔫或变色的现象。第九天时,粘菌(欧文氏菌属某些种,假单胞菌属某些种)导致产品腐败并散发出浓重异味。
[0034]12天后保存在气调包装储物器内的嫩叶产品在总范围5的分级中可列第4级(5为极好,3为勉强可接受)。莴苣的褐变和萎蔫情况不明显。保存12天之后,气调包装产品可评为3.5级,并且仍适于食用,无异味,也没发现霉变或腐败现象。
[0035]显然,本领域的技术人员能很轻易发现,在不脱离原发明的精神和范围内,本发明在实践中还可以进行多种修改和变动。相应的,本发明的保护范围可以通过以下各项权利要求的实质性限定进行解释。
Claims (7)
1.保存新鲜即食水果和蔬菜的系统和可反复使用的塑料储物器,将去皮、去籽后的切片装入气调包装内,气调包装的氧气含量为1%到15%,二氧化碳含量为1%到20%,相对湿度为75%RH和100%RH之间。
2.一个可反复使用的塑料储物器(图1,图2),具有不同形状,包括但不限于圆形、方形、矩形或椭圆形,并由两到三部分组成,包括:
a)容器体,成分是一系列塑料材料,包括但不限于聚酰胺(尼龙6,66,11,或12,及其混合物)、聚碳酸酯、聚乙烯、聚对苯二甲酸乙二醇酯,聚丙烯、聚苯乙烯、聚氯乙烯及其混合物;
b)盖子,成分是一系列塑料,包括但不限于以下材料:聚酰胺(尼龙6,11,12,或66,及其混合物)、聚碳酸酯、,聚乙烯、聚对苯二甲酸乙二醇酯、聚丙烯、聚苯乙烯、聚氯乙烯及其混合物,盖子为三组件式宏穿孔或二组件式微穿孔;
c)在盖子和容器体间密封的透性不等的透气膜,成分是一系列塑料,包括但不仅限于以下材料:聚酰胺(对氧气和二氧化碳有高阻碍性,但水蒸气可自由透过)、聚乙烯、聚丙烯、聚氯乙烯及其混合物和/或层压产品。
3.采用气调维持食品质量并进行保存的系统,包含1%到50%的二氧化碳和1%到15%的氧气。
4.可供薄膜选择的系统,根据特定包装体积和产品呼吸作用而设计氧气和二氧化碳渗透性,包括:
类别1
高阻碍性薄膜
氧气穿透率为:1标准大气压,25℃下,每24小时100到1500cm3/m2
二氧化碳穿透率为:1标准大气压,25℃下,每24小时300到4500cm3/m2
类别2
中阻碍性薄膜
氧气穿透率为:1标准大气压,25℃下,每24小时1500到5000cm3/m2
二氧化碳穿透率为:1标准大气压,25℃下,每24小时4500到15,000cm3/m2
类别3
低阻碍性(高渗透性)薄膜
氧气穿透率为:1标准大气压,25℃下,每24小时25,000+cm3/m2以上
二氧化碳穿透率为:1标准大气压,25℃下,每24小时75,000+cm3/m2以上
实样应用:蘑菇,芦笋。
5.去除食物中的水分和因呼吸作用产生的水分的系统,控制容器内的相对湿度在75%到94%之间,最好是75%和85%之间;采用聚酰胺材料的容器、盖子或膜,其吸水和气体传输性能范围为在75%到100%的相对湿度下每天1.0到2.5g-mm/m2,产生的相对湿度抑制产品因微生物发生腐烂。
6.可以独立控制储物器内气调和湿度的系统。
7.具有呼吸作用的新鲜食物的密封包装系统,密封包装的质量(克)与总的体积(cm3)比例为0.3到0.6,密封包装顶部空间的气体成分是1%到50%的二氧化碳和1%到15%的氧气,相对湿度为75%RH到100%RH。
