Abstract

"PROCESSO PARA A PRODUçãO DE UM PRODUTO ALIMENTìCIO CONGELADO". A presente invenção proporciona um processo para a produção de um produto alimentício congelado compreendendo a etapa de contato de um intermediário alimentício com um sistema emulsificante, em que o sistema emulsificante consiste essencialmente de compostos da fórmula (I), em que R~ 1~, é um grupo hidrocarboneto; e opcionalmente mono-diglicerídeos e/ou mono-diglicerídeos lactilados insaturados.
