COMPOSIÇÕES DE PROTEÍNA PARA PRODUTOS ALIMENTARES À BASE DE PLANTAS E MÉTODOS PARA FABRICAÇÃO. Um método é divulgado para fabricar emulsões de proteína para uso na fabricação de produtos, tais como substitutos de carne, extensores de carne, substitutos de ovo, análogos lácteos etc., bem como métodos para usar a(s) emulsão(ões) para fabricar vários substitutos de carne, substitutos de ovo, análogos lácteos etc. Também são divulgados fragmentos de proteína vegetal para uso como substitutos de carne, sozinhos ou em combinação com a(s) emulsão(ões).
