Abstract
The method is used in the manufacture of dairy products. The inclusion of vegetable fats in normalized milk results in obtaining dietary products with preserved structural, mechanical and organoleptic characteristics. The method involves emulsifying the oil phase from hydrogenated vegetable fats in a milk phase, made up of skimmed or whole natural milk, regenerated dry milk, sweet cream whey, milk cream or a mixture thereof and homogenizing the emulsion to the point of achieving the structural and mechanical properties typical of milk fat.
