Abstract

Se describe un método continuo que usa dióxido de carbono gaseoso o un flujo presurizado de dióxido de carbono licuado, para reducir la actividad microbiana y/o enzimática en un producto líquido. La mezcla es presurizada después que se ha formado la mezcla. La presión y temperatura en las regiones de flujo se mantienen a un nivel que es suficiente para mantener el dióxido de carbono en un estado líquido continuo, pero que no congela al producto líquido. La mezcla presurizada del dióxido de carbono y producto líquido fluye a través de una zona de reacción por un tiempo suficiente para reducir los microorganismos daninos y/o inactivar las enzimas y luego entra a una o más etapas de expansión en donde la presión del flujo de la mezcla se disminuye suficientemente para vaporizar el dióxido de carbono para la separación del producto líquido. Si es necesario, se aplica calor en por lo menos una de las etapas de expansión para prevenir la congelación de la mezcla.
