Inherited from Middle French escoutille, from Spanish escotilla, from Spanish escotar (to make a neckline; cut something low), probably from Gothic 𐍃𐌺𐌰𐌿𐍄𐍃 (skauts, end; edge of a garment), from Proto-Germanic *skautaz (corner; wedge; lap).
