LIPIDS
Learning Objectives
At the end of our discussion, you should be able to:
1. Recognize the major categories of biological molecules;
2. State the functions of carbohydrates, lipids, proteins, and nucleic acids in the
body; and,
3. Express appreciation for the role of biomolecules in everyday life.
Lipids
Made up of hydrocarbons and are highly soluble in alcohol but usually
insoluble in water.
Saponifiable - break down into
simple lipids and compound lipids in
the presence of a base
Saponifiable – do not break down
into simple and compound lipids

insoluble in water.

Lipids
In most living organisms, lipids function as energy storage and as part of
the structure of membrane cells.
Fatty Acids
They are long-chain carboxylic acids that have an even number of
carbon atoms
Saturated FA – with single bond
Unsaturated FA – with one or more double bonds
Fatty Acids
Fats and Oils
Triglycerides are esters of glycerol and three fatty acids. They are the
fat reserves in plants and in the fat cells of animals.
Glycerol, which is the main
component of glycerin, is a
trihydroxy alcohol that belongs
to the alcohol group of organic
compounds. It serves as the
backbone of triglycerides.
