I am very glad to see that all of you are here, so before we start our orientation for today, please sign to this

orientation by introducing to you our training Center.

f. CBT (read the ppt) emphasizes most on what the learner can do; focuses on outcomes
rather than the learning process within specified time; CBT is concerned with the
attainment and application of knowledge, skills and attitude to a specific level of
competency.

Explain CBT Process flow
This is the outlines the process for Competency Based-Training. It involves Trainees who entering a
program (like you guys who are currently enrolled to Bread and Pastry Production NCII) later were
going to administer RPL or Recognition of your Prior Learning to determine if you need to undergo
all the competencies or you should proceed with the assessment, only if you can provide documents
sufficient to proceed to the assessment. Then orientation, like what we are doing right now, I’ll
explain to you later about the roles of trainer and trainees as well, and so on
Then you can select competency you want to undergo first and receiving instructions. Then I’ll give
you a contract and you should read it and sign the contract. then I’ll organized Learning strategies
Provide you a materials, Introduce to you Curriculum- Based Learning Modules materials that we
will dicuss this further later, and I’ll Introduce the use of achievement progress report.
Then here, where Learning takes place( where in you can (Read the PPT) once you are ready to
perform the task, then you can proceed. Your performance will be rated by me and yourselve, then
you contenue practicing the needed competency untill you achieved satisfactorily. And Complete all
Competency. You may exit the program or Then you can finally undergo NATIONAL ASSESSMENT
Principles of CBT
1. This means that the training program follows a curriculum (a structured set of learning
experiences) that has been created using specific competency standards as a guideline.
2. A qualification is composed of sets of competencies a worker should have. Generally,
one competency is one module, but some competency maybe divided into training
module, you should learn and master one competency after another until you attained
all the competency needed in this qualification.
3. this means that the training program is tailored to meet the unique needs of each
learner (individualized), allowing them to progress through the training material at their
own speed (self-paced). This approach ensures that learners can take the time they
need to fully understand and master the content, making the training more flexible and
personalized.

A competency Based facilities focuses on providing an environment where students can develop and
demonstrate specific skills and knowledge at your own pace. These are
1. Contextualize learning area facility with audio-visual equipment for creating and viewing of
multimedia’s content. Also, you have an access here to Learning materials to ensure the
underpinning knowledge are provided to you.
2. Trainers resource area
3. Learning Resources Center – this area provides the learners with the knowledge
requirements in various module responding to the competency.
4. Quality Control area
5. Support service area
6. Distance learning area
7. Computer laboratory- where has an array of computer unit for you IT competency
8. Practical work area – where you can acquire, practice, perform your skill in baking
9. Institutional assessment Area- very much like practical work area, where recognition of prior
learning is done and of course this facility is where the assessing of completion of
competency is done.
• Evaluation System- you will be assessed through Written Examination, Demonstration,
Observation and Oral Questioning and to monitor the process of training using the following tool

the Training Activity Matrix, Achievement Chart, Progress Chart and Trainee’s Record Book.
In CBT training, non-numerical grading systems are use this is done by stating if you are Competent
or Not Yet Competent. For NYC it doesn’t mean that you failed but at this point you need further
mastering the skills and it will give you a chance to be competent, so your attitude, skills and
knowledge are very important in your evaluation.

Gathering Instrument and Self-Assessment Checklist that you need to fill out. Don’t forget to write your
name and read the instructions carefully. These instruments will help me to know your characteristics as
learners and determine the appropriate training methods. I’ll give you 15 minutes to answer

Like what I have told you a while ago, where going to have the recognition of your Prior learning
I have here a pre-assessment test. This instrument will help me to determine the level of your knowledge to
the qualification as well as the current competencies. Don’t forget to write your name and read the
instructions carefully, Ill give you 30 mins to answer this.

As I have checked your answers on a data gathering instrument, self-assessment checklist and pre-
assessment test. I found out that some of you are newly graduates while some of you have worked in the
industry and have different styles of learning. So Once I call your name come with me for your assigned area
and I will give you further instruction. Ok?

Ok let start with, Ms. Shiela come with me at Contextual Learning Laboratory, based on the results of your
pre-assessment, you do not have knowledge about this competency. here is a CBLM to Prepare and present
gateaux, tortes and cakes. Read all information Sheet form 3.1-1 and Answer the Self-Check on page 25.
then you may compare your answers to the answer key. Ok? If you have any question do not hesitate to
ask me. I am more willing to assist you. I’ll go back to you after you finish your task.
Ms. Dhalia Stay here at the Learning resource area. Since you are a visual learner, I prepare video
presentation on how to prepare cakes but for now listen to me as I discuss the competency about Prepare
sponge and cakes. (discuss the content) and for further understanding watch this video on how to prepare
cakes according to Recipe specifications, techniques and conditions and desired product characteristics

Let me check your Achievement chart. Now lets practice your skills in baking come with me at Practical
Work Area, here are the tools, materials and supplies on how to prepare sponge and cakes.
Please wear your Personal Protective Equipment first.
1. Read the recipe carefully for you to know if you have all the ingredients and utensils needed and
understand the entire procedure.
3. Preheat the oven.
4. Prepare all ingredients.
5. Mix all dry ingredients in a bowl, then the Liquid Ingredients to another bowl, combined them to make
the batter mixture.
6. prepare the merengue
7. then gently fold the merengue to the batter mixture with out over mixing it.
8. Pour in rectangular pan line with wax paper.
9. Bake at 300 F at 10-15 min.
10. If done, sprinkle with confectioner’s sugar and invert.
11. Roll loosely with the help of wax paper or cheeses cloth. Then Allow to cool.
11. Prepare Filling/frosting.
12. Unroll again and place in a half roll pan spread the fillings
13. Cover and decorate with icing or frosting.

Alright, based on the Performance Criteria checklist, you were able to

2. You Properly use of mixing methods (creaming, folding, whisking).
3. And use the proper tools and equipment for each step …
However,
1. you also have to make sure that your workplace is organize and clean, that is very important so
keep that in mind.
2. And observe proper baking time so you don’t over bake your cake.
So, I’ll give you more time to practice and then when you are ready, we can proceed with the institutional
assessment. When you have performed satisfactorily, then that’s the time I will check your Achievement
chart.
Ms. Shiela Okay are you ready for the institutional assessment? There will be two methods: Demonstration
with Oral Questioning and Written Test. So given the tools and materials, you are required to prepare
sponge and cakes You are given 2 hours to finish the demonstration.
Okay you now are finished with the demo. Let me ask a few questions on your product.

How do you determine when a cake is fully baked?
Now, you may take your written examination at the Institutional Assessment Area, here is your written
examination test and leave your answer sheet on the trainer's resource area.

you can watch the video I uploaded on our google classroom and then tomorrow when you are ready, we
can proceed with the institutional assessment. I will also assign Ms. Eunice to help and guide you in case you
