A. GREATING GUEST AND ESCORTING GUEST

salah satu sesuai jenis kelamin tamu)

Guest : 1 person
Waiter/ waitress : Did you have any reservation before?
Guest : No, I have’nt
Waiter/ waitress : Well Ladies or gentleman, We have table nomor

B. SIITING GUEST TO THE CHAIR

C. UNFOLDING NAPKIN

D. POURING WATER

E. SERVING WELCOME DRINK (JIKA ADA)

Biarkan tamu memilih makanannya terlebih dahulu, dan kita sebagai waiter/es
meninggalkan tamu ke sebelah kiri side board.
Datangi tamu ketika tamu memanggil dan siap memesan.

I. TAKING ORDER AND REPEAT ORDER


Sebelum mencatat pastikan sudah membawa pulpen dan captain order serta bill
cover.
Waiter/ waitress : Are you ready to order miss/ sir?
Guest : Yes, I would like to orde… (sebutkan pesanan
tamu)

Sebutkan sesuai dengan pesanan tamu di awal.

Tinggalkan tamu dan kirim pesanan ke kitchen.

Bawakan pesanan dari kitchen kemudian letakkan terlebih dahulu di atas side
station atau side board. Tata kembali makanan dan pastikan tidak ada yang rusak
atau berantakan.

J. SERVING APPATIZER

pesanan) miss/ sir? Enjoy Please.
Guest : Yes, Thank you

Tinggalkan tamu dan biarkan mereka menikmati makannya. Perhatikan water


gobler tamu. Jika water goblet dalam kondisi kosong, waiters harus sigap dan
segera menuangkan air dingin ke water goblet..

K. CLEAR UP DIRTY PLATE


Jika semua tamu dalam satu meja sudah selesai makan, maka langsung clear up.
Waiter/ waitress : Excuse me. Have you finish miss/ sir?
Guest : Yes
Waiter/ waitress : May I Clear up it, miss/ sir?
Guest : Yes, Please

Setelah Clear Up, bawalah semua peralatan ke kitchen.

L. SERVING SOUP
Waiter/ waitress : This is your order ……. (Sebutkan nama
pesanan) miss/ sir? Enjoy Please.
Guest : Yes, Thank you

P. CLEAR UP DIRTY PLATE


Jika semua tamu dalam satu meja sudah selesai makan, maka langsung clear up.

Waiter/ waitress : May I Clear up it, miss/ sir?
Guest : Yes, Please

Setelah Clear Up, bawalah semua peralatan ke kitchen.

Q. CRAMMING DOW
Membersihkan meja makan tamu dan melakukan clear up pada alat – alat yang
tidak digunakan oleh tamu. Adapun alat yang diclear up antara lain:
1. Welcome drink yang sudah digunakan tamu
2. B&B plate dan knife yang telah digunakan maupun tidak digunakan (Yang
telah digunakan dibawa ke kitchen sementara yang tidak digunakan
dibawa ke side board).
3. Salt and paper, serta tooth pick
4. Cutleries yang belum digunakan
5. Napkin yang belum digunakan
6. Water goblet yang belum digunakan
Cramming Down dilakukan dari bagian kiri tamu menggunakan B&B Plate dan
napkin di lipat segiempat pendek. Pada saat cramming down, bagian sisi meja
dibersihkan dengan pelan – pelan dan memindahkan cutleries untuk dessert ke

posisi masing – masing (Dissert Knife ke bagian kanan, sementara Dessert Fork
kebagian kiri)

R. SERVING DESSERT
Waiter/ waitress : This is your order ……. (Sebutkan nama
pesanan) miss/ sir? Enjoy Please.
Guest : Yes, Thank you

Tinggalkan tamu dan biarkan mereka menikmati makannya. Perhatikan water


gobler tamu. Jika water goblet dalam kondisi kosong, waiters harus sigap dan
segera menuangkan air dingin ke water goblet..

S. CLEAR UP DIRTY PLATE


Jika semua tamu dalam satu meja sudah selesai makan, maka langsung clear up.
Waiter/ waitress : Excuse me. Have you finish miss/ sir?
Guest : Yes
Waiter/ waitress : May I Clear up it, miss/ sir?
Guest : Yes, Please

Setelah Clear Up, bawalah semua peralatan ke kitchen. Kemudian siapkan guest
comment untuk tamu.

Q. GIVING GUEST COMMENT


Waiter/ waitress : Excuse me. miss/ sir? Please give some comment
about our service and restaurant today.
Guest : Yes.
This is the comment.
Waiter/ waitress : Thank you for your comment, miss/ sir.
Guest : You are welcome

R. BILLING
Ambilkan bill dan serahkan ke tamu. Bawa bill dan pulpen serta bill cover.
Waiter/ waitress : Excuse me miss/ sir. This is your Bill. And you
should pay …….. Rupiah (sebutkan harga yang
harus dibayar tamu), We Have to kind of
payment there are by card and chas, which one
do you prefer?
Guest : I Will pay by card please.
Waiter/ waitress : Well Mister/ Miss, May I have your card?

S. BILLING WITH CHAS


Ambilkan bill dan serahkan ke tamu. Bawa bill dan pulpen serta bill cover.
Waiter/ waitress : Excuse me miss/ sir. This is your Bill. And you
should pay …….. Rupiah (sebutkan harga yang
harus dibayar tamu), We Have to kind of
payment there are by card and chas, which one
do you prefer?
Guest : I Will pay by chas please.
Waiter/ waitress : Well Mister/ Miss, May I have your money
please?
Guest : Yes. This is my money
Waiter/ waitress : Please wait for your charge.
Guest : Oke
Waiter/ waitress : This is your charge and also your bill

T. CLOSING AND GIVING MAGIC WORD


Waiter/ waitress : Well ladies or gentleman. Thank you very much
