The fish meats are fully trimmed and cut into slices with 1-20 mm thickness,
preferably 2,5 mm.
The slices are immersed in a hot bath with temperature most preferable 60°C for
most preferable 10 seconds. This hot bath contains water, 0,01 %-5 % of a 7 %
commercial vinegard solution, 0,01 %-5 % NaCl and 0,01 %-l % antioxidant.
The slices are rapidly transferred to a cold bath with temperatures between the
freezing temperature (0°C) and 30°C, comprising water, 0,01 % -5 % NaCl,
0,01 %-l % antioxidant, for instance ascorbic acid and, possibly 0-5 % of a 7 %
commercially available vinegar solution. The immerse time in the cold bath is
most preferably 900 seconds.
The slices are placed on a grating in a suitable drying unit for air-drying at
temperatures most preferably 25°C for 2-48 hours.
